  • After you have made this buttercream successfully for the first time you can almost never go back to the original way of making buttercream. Less sugar, more flavour, better taste and such a gorgeous finish to a cake. This is not the easiest Thermomix recipe but it is so worth it and with a few tips and tricks you can get there, I promise. I will help guide you through the process.

    I made it and it worked perfectly. Thanks Sophia. I used 360g of butter. I didn’t have a candy thermometer - just eye balled the syrup.

    Sophia, my first time making this as let's say, a beginner cook and first time user of the thermomix - worked perfectly. Put it on top of your Carrot Cake recipe and AMAZING! Thanks - now a big fan! Congrats on the child too ;-) No feeling like it in the world!

    Used the thermomix to do it. I’ve done everything exactly as the recipe. The meringue came out perfect but when I turned it into a butter cream it just ended up in a soup

      I was going to ask the same. I tried the recipe it was a success but It was still sweet like AMBC. I hope Sophia answer us.

      Try Swiss Meringue Buttercream, it's less sweet I believe

    When using this type of Italian meringue for Pavlova, does it cook in the same amount of time as ‘standard’ Pavlova mixture?

    Hello, Can you please confirm if its 300grams or 360 grams of butter? The video says 300 however the printed recipe says 360grams. thank you x

    I realised it used TM6. Can TM5 work well as TM6 for this?

    How long would this buttercream keep? Could you freeze some

      3 days... you can’t freeze it because it will destroy the bubbles

    It didn't work for me :( Went completely runny at the adding room temperature butter phase. Any idea what might've gone wrong? :/

      You need to continue mixing it, even if it looks curdled when you whisk it, it will become good consistency
