Pumpkin Spice Cupcake Recipe & Tutorial with Dane! | Cupcake Jemma

- Pumpkin Spice cupcakes are always a favourite at the shop - they're a total Autumn classic! A moist lightly-spiced sponge topped with tangy whipped cream cheese icing and toasted pumpkin seeds; you guys are going to love these, and they're soo easy to make! Soho bakery manager Dane's here to share the recipe with you guys and as always don't forget if you are baking these at home let us see how they come out using the hashtag #cupcakejemma.

This recipe will make 12 - 15 cupcakes
225g Self-Raising Flour
145g Caster Sugar
145g Dark Brown Sugar
1/2tsp Bicarbonate of Soda
3/4 tsp Salt
1.5 tsp Cinnamon
3/4 tsp Nutmeg
3/4 tsp Ginger
603g/1.5 cups Canned Pumpkin
185ml / 3/4 cup Veg Oil
3 Large Eggs
Cream Cheese Icing:
125g Soft Unsalted Butter
200g Full Fat Cream Cheese
700g Icing Sugar, Sifted

Great video, Dane et al at C&D always bring a smile to my face because they are so joyful when baking! Question about pumpkin purée amount: is 603g the right amount? I read online that a cup of pumpkin purée is between 240g - 290g. Sally’s pie the other day used 330g and the amount on screen here doesn’t seem to be almost double of that...... keep up the fabulous work everyone!
yes! it's not right, use 1 and 1/2 measuring standard cups I think they slipped up there
@@brendasangerman9683 omg I’ve made this recipe so many times and it has never worked and I’ve only just thought that I’m maybe using too much pumpkin. So are you saying 1 full cup and then 5th of a cup? I’m so desperate to make these cupcakes as the flavours are some of my fav but the mixture is just always too wet
@@jennifersmith943 sorry I just edited my comment I meant 1.5 cups (as it states in their description box for the volume measurement, there's when I realized the recipe was wrong because there's no way that quantity is equivalent to 600g)
So what I mean is: use 1 whole cup plus half a cup more. This will be roughly 375 grams (give or take) which is almost half!
As described in the original comment by @jenny wong I think 330g should be ok to have normal spongey cupcakes. Last time I made them I used the 1 & 1/2 cup measurement which is a little bit more as I mentioned above (around 375g) and they ended up being really moist but delicious I like them better so I use that, depends on preference.
But 600g as the recipie states, well that's never going to work they will break apart.

Did yours bake ok for 19 mins at 150? I’m baking mine now are they are taking a lot longer. Maybe different oven?
@@jamessm5012 I did bake them as Dane suggested, but didn’t put as much mixture in my cases as Dane did. They do come out quite squishy but are still delicious...didn’t make the cream cheese topping just used squirty cream 😊
@@jamessm5012 Mine are taking a lot longer too, even with smaller cakes. Mine needed at least 25 minutes on 150.

I had already set out to do pumpkin spice today but I planned to use Jemma’s old pumpkin pie cupcake recipe and do some tweaking, but this is right on time so ill give it a try!

Yay Dane. This was awesome and you cracked me up with “is that too aggressive”. I make a pumpkin loaf which is really similar but I add chocolate chips to be extra naughty, it’s definitely the cream cheese icing that makes it though 😘

I was about to make the recipe when I realize a little mistake in it, I've weighted 1cup and half of pumpkin and it was 345g on the scale and not 603g, so now I'm confused, is it 345g or 603g of pumpkin puree!? 603g seems a lot, isn't it!?
