Spruce Syrup: Pioneer Syrup & Poor Man's Lemonade

  • We recorded a video on how to make spruce syrup last year, but the editing program corrupted the video and it was gone. We had to wait an entire year to remake the video, and here it is.
    Spruce syrup was a syrup replacement for our pioneer ancestors as there are very few maple trees in the western USA, and even fewer sugar maples. Growing sugar cane or sorgum was also not something done in the West. In order to have some form of syrup that was not shipped across the nation or around South America to the west coast, which was cost prohibitive, our ancestors created spruce syrup as a substitute.
    You can use spruce syrup is so many ways - add to powdered sugar for icing, make poor man's lemonade, put into baked items, and of course pour over waffles or pancakes.
