What exactly is cream of coconut and where do I find it? I tried a canned coconut cream once but it was so liquidy that my buttercream never came together :( Help! This looks so delicious, I have to make it!
Pineapple juice is too thin and could cause the buttercream to split! To amp up the pineapple flavour, you could add jam instead 😍 the cream of coconut is a syrup-like consistency compared to coconut milk which would also be too thin to emulsify into the buttercream.
