I am a sweet tooth, love desserts, and have been baking sweets for as long as I can remember, but only recently I got more curious about the process behind and gain more knowledge to improve my recipes. I am considering going to a baking school at some point in my life, but first I wanted to understand the fundamentals, hence how I came across your UA-cam channel. I just tried sponge cake for the first time. I found a video off UA-cam and I tried to follow the recipe but when I baked the cake it had this eggy smell and honestly it tasted eggy too. Any advice on that? I am a novice baker and I’m really trying to get better. I’m also looking for a good cook book that I can follow.
Did you try the cake when it was warm? Sometimes sponge cakes can smell and taste eggy right out of the oven. They need to cool down completely before trying them. You're in luck! I have a foundations cookbook coming out in October. Follow me on Instagram @bakerbettie for updates!

Dont wanna sell products where my method isnt on top form! Think its a little unfair if I charge a whole lot for my products but know in my heart I didnt have a good production line. Will let you know what happens.
The difference is that extracts are made with alcohol and emulsions are made with a mixture of water and vegetable gum. The initial flavor is about the same, but emulsions will have a longer lasting flavor after being heated.

However, as a French speaker, I would like to point out that the correct pronunciation of "mise en place" sounds like "MEEZON PLAHSS," as the "s" makes a "z" sound while it pushes into the "en" which always sounds like "ohn."
