I had never had prawn heads in my life and that was so interesting! I’m glad I came across this video so I could have some confidence on what to cook them with!
A request! Sometimes I’ll buy a special ingredient because I want to try one of your recipes faithfully - but then I don’t know what to do with it after, like soybean paste lol. Could you profile the recipes where you use speciality ingredients? E.g. miso paste, gochujang, Chinese salted black beans, etc.? It’s helpful for learning and to reduce the stress of seeing it in the back of the fridge unused :)
Type gochujang recipe\miso paste recipe and you will have plenty of options to choose from. Miso can be added ideally to any broth, to deepen it (don’t boil it, becomes bitter and it loses his ferments). Chinese salted black beans can be added to tomatoe eggs, or to rice, or to any stir-fried dish. Gochujang can be a base for a fun first home fermentation project. You can go classic with kimchi but also chives, cucumber, daikon etc can be fermented.
i throw miso paste into simmering water or stock to make an easy miso soup. Throw in peppers, mushrooms, soy sauce, Rice Vin, ginger, garlic, soft boiled egg and you've got ramen. Can literally make this every weekend. Gochujang can use in any meat marinade. The black bean paste, I did end up throwing some away. Probably lots of recipes could use it. Especially beef.

Wow! All these dishes look amazing! I was mostly impressed by the Korean pancakes, they’re so different from what I’m just to here in the Netherlands. I suggest you make Dutch pancakes for yourself one time, it’s super simple. Just add 250 g flour with 2 eggs and 500 ml of milk and mix it up. For me, the best way is to first bake slices of bacon and thin slices of apple (yes! Trust me) and pour the batter over it. We serve it with powdered sugar or a Dutch sugar syrup, which has a delicious caramel/molasses flavour!

Great collection. No matter how many Thai grocers I visit, I can never find the beautiful dried long chillies you use to make curry pastes or the Szechuan prawns in this video. Fresh are easy to source so do you have any tips on drying at home or recommend any substitutes. Thanks Marion 😊

Marion, could you please make some authentic Asian desserts? While in London some years ago, this Thai cafe made this amazing pancake stuffed with black beans and coconut. But they shut up, and I could not ever find that dessert again, just the usual fried banana or sticky rice pudding. I wonder if you will be able to locate the recipe. Thanks in advance.

Also if I was there with you I'd be doing more than smelling it, I envy your camera person. They must get so hungry while you're cooking. But I'm sure you feed them. Lol. This video is so good. Really going to try the recipes. Just one thought about the aluminium foil ... please use a bowl upside down or anything like that and not a whole role of foil. The nature and your CO2 footprint will thank you.

Miso paste and gochugang do well in salad dressing and as a broth for noodles
They make incredible marinades and dressings!
