@@KyesKitchen Thank you so much for your quick answer :) I'm searching for more details and have just found out that 1.adding alkaline such as calcium carbonate (can be replaced with baking powder) helps to make it heat stable, and 2.adding insoluble fibers such as oat fiber helps to improve its texture. I actually followed your recipe cos I wanted to keep thing simple. Will check again after it has set😊
@@fahsai7902 I tried that alkaline solution thing. But I use Calcium hydroxide. Ahahah wasted alot of ingredients in my experiments and currently taking a break from that. Definitely will share my findings when I refine the recipe enough to post it up. ❤️

Hi WuChen, thanks for watching. ☺️ As mentioned in another comment, not all konjac powder are created the same. They may need different amount of water to reach the right consistency. As far as I am concerned, there is no clear differentiation of labelling for this ingredient. It’s sometimes labelled as konnyaku powder, konnyaku jelly powder, konjac powder or glucomannan. Just be sure to read the ingredient list that there is no sugar or other additive in it and adjust the amount of water according to the instructions on packaging. Hope this helps!!

Hi Eunice, I just started my experiment with konjac powder not long ago. I will share a full article via email once I get very familiar with it. It basically acts as a binder, much like xanthan gum. It's commonly used to make jelly dessert. Japanese use it to make konjac tofu/noodles. It also has some interesting properties that I think would be very useful for my future recipe development. eg.: it gels and firms up with heat and higher ph. haha still not super clear with the usage yet but definitely a very nice addition to my keto ingredients. 😁

魔芋粉差异是在于普通魔芋粉和魔芋微粉/魔芋精粉,后者是在前者基础上再次提纯过的,吸水量大约是前者的六倍,用量大的食谱用的都是前者。所以买的如果是魔芋精粉,只要按照用量大的食谱除以6就好啦~

Hi Chao Ming, thanks for watching ☺️The non-keto version of this dish (凉粉 liang fen) is made from mung bean. Hence I call it keto mung bean noodles.

你好,我买的名字是写着konnyaku powder, 也就是konjac powder. 市面上的魔芋粉是有纯度的区分,纯度越高用的量越少,只要确定成分表没有其他添加物,然后根据商家指示的量加水做就可以了 ☺️
