A few variations on that dish (not laksa, but still yummy): add a tablespoon of crunchy peanut butter, add a tablespoon of miso paste, add a teaspoon of curry powder or cumin, or add a dash of fish sauce. To take it in a completely different direction, add chili oil and Szechuan peppercorns. For freshness, add soybean sprouts or mungbean sprouts and mint, cilantro, culantro, or Thai basil.
Peanut butter is a bit off but the others are okay. As a Malaysian, the basic curry laksa is just curry spices, noodles, tofu puffs and cilantro (I think).

Laksa for one does sound like your loved. Laksa is just the best dish to add insane amounts of veggies & proteins 😊😊 but even without all those you can still get a hearty meal
There are two different kinds. I think in this case it is a fried and dried tofu. And than there are several brands selling dried soy bits which is just dried tofu and you put it in broth for a few minutes and treat it like meat (marinate it, fry in pan, add to soup,..)@@cockamamy

I also do cook for only myself when I make lunches because I work from home and my husband doesn't. I do love my curry laksa with the traditional curry laksa veggies (long beans or French beans or broad beans cut in two inch lengths and same with the eggplant/brinjal) in there, yes you can cut them with a sharp scissor but can be messy, especially the eggplant.

I'm about to blow your mind: to make the best laksa / ramen noodles you've ever had, boil regular spaghetti pasta or fettucine like you normally would, but add two teaspoons of baking soda to the water. It perfectly replicates the taste and texture of noodles made using kansui, an alkaline mineral additive that gives ramen its chewy, springy texture. It'll blow your mind, try it.
There is actually a laksa hack you can use and that's mixing red curry paste with curry powder. But, be aware guys, some red curry pastes contain shrimp.
