    This raspberry filling is the perfect way to level up your baking! With a wonderful tart flavour, it helps to take that sweet edge off baked goods. Use it as a filling or topping for cakes, cupcakes, cheesecakes, macarons, biscuits and so much more!

    - 1 cup (110 g) frozen raspberries
    - ¾ tbsp (6 g) cornstarch - also known as cornflour
    - 1 tbsp (15 g) lemon juice - must be fresh

      Late response but yes you can do it with strawberries. I made it myself with strawberries (it was delicious) and she responded to another’s comment who asked this question that you can do it.

    I used frozen strawberries instead. How much do i place on an 8- inch cake layer?
    I made a double layer and after frosting, a lot of jam seeped out all over the sides. I did make a border to prevent that but i think i put too much jam. I used the entire batch. The cake ended up sliding and looked awful 😢
    Filling was still great tasting though. So how much should I be using on one 8-inch layer?

    Hi, if my filling is Abit runny, can I add more cornstarch for it to thicken ? And also am I required to reheat the filling when I am about to pipe it into the cupcake ? If I keep the filling in the refrigerator

      Hi there! Yes you can totally add more cornstarch :) and no need to reheat it just make sure it's at room temp and give it a good mix if it's a bit firm, this should loosen it up a bit :) worst case scenario then you can warm it up a little if it's still too firm. Enjoy!

      Ahh yess! You can strain the mixture once made before it cools if you prefer to not have the seeds :)

      Should be fine! It just won't take as long to thicken up :) and if it seems like the raspberries aren't disintegrating then add a little water (about a tbsp) and this should help :)
