VEGAN FISH-LESS ESCOVITCH
INGREDIENTS:
-1 can Banana Blossom
For seasoning the Banana Blossom:
-1 tsp all-purpose seasoning (chicken-less or fish-less seasoning of your choice)
-2 tbsp ground seaweed or nori flakes
For Batter:
-1 cup gluten-free flour (I used the Bob Red Mill Brand)
-3/4 cup water (If the batter is too thick add more water by tbsp until it reaches the right consistency)
-1/2 tsp baking powder
-1/2 tsp paprika
-1/2 tsp onion powder
-1/2 tsp salt
pinch of turmeric (for colour)
For Escovitch sauce/seasoning:
-3 small Carrot, julienned
-1 small onion, sliced in rings
-1/2 green bell pepper, sliced
-1/2 red bell pepper, sliced
-1/2 scotch bonnet pepper, deseeded and sliced
-1 tbsp pimento berries
-1/2 cup lemon juice
1 tsp sugar, optional (to help with the reduction of heat)
1 tbsp oil or water for sauteing

What is banana blossom ?
Banana blossom is the burgundy colour flower part of the banana plant. You can get it in the Asia section of the grocery store in a can...I bought it in food basic and Danforth market.
