Onion dip / Quick recipe but really delicious!

This caramelized onion spread/onion dip is amazing! It is a mixture of sweet / salty / spicy which is surprising by its subtle flavors. With few ingredients, this spread is ideal for a quick snack. Good tasting !
Ingredients :
3 onions
3 tablespoons of rice vinegar
3 teaspoons of sugar
1 tablespoon Sriracha
1 tablespoon smoked paprika
1 teaspoon of mustard
Juice of 1/2 lemon
180g spreadable cheese
1 pinch of salt and pepper
1 handful of chives
1 - The Sriracha sauce can be replaced by any spicy sauce! For example: Tabasco.
2 - The cheese spread can be replaced by plain yoghurt or Greek yoghurt or fromage blanc or cottage cheese.
3 - You can also serve this spread on salad leaves or with a cheese platter.
4 - The sugar can be replaced by maple syrup or honey or date syrup for example.
