Love crawfish sautéed in butter,garlic,crushed red pepper,salt,pepper. Over pasta with a boat ton of freshly grated Romano cheese.❤👍💯. In Oregon we would get huge fresh five gallon buckets of crawfish in the Smith river❤.
jumbo and jambalaya are not Cajun, and they would have loved Cajun food better, the flavor is more closer to Mexican flavor, cajun lacks the heavily african influences and has more native american and even asian, which is what mexican cuisine is, more European and Native American with Asian influences as well
Nah, they made some things that both would toss in the long grass. The biggest difference between Creole (city) and Cajun (country) is usually roux vs okra. They both have a French heritage. Roux based gumbo is actually more popular in Louisiana including New Orleans. I'm from Lafayette LA. These days it's more of a preference choice really.

I personally love Etouffee but have always thought of it as a gateway dish into Cajun/Creole cuisine for those who don't like spicy food It is rarely made spicy as so many other dishes are and its primary flavor comes from the natural flavor of the combination of vegetables and/or the protein used in the dish. So I can see that if you're accustomed to spicy food, or even highly seasoned food, that this dish may seem a bit bland. I enjoy that mild flavor and usually make it 2 or 3 times in the colder months of the year. It can be very comforting.

They do not have our seasonings on the shelf either. I have learned just to make dishes myself or wait till I go back home to visit.

I have never heard anyone say they don't like Gumbo. Was that shrimp gumbo, file, or okra? Whoever made these dishes surely cannot cook because New Orleans is #1 for their food. Also, people go there and have heart attacks because they are not used to all of the seasonings and flavor. So them saying it has no flavor, that is how I know the person who cooked this is not born in New Orleans. I see places in other states claiming New Orleans style food and it be nasty as heck. They know that if they just say New Orleans, then people will assume they are from New Orleans and the food must be good, but they are just using the New Orleans name as a marketing tactic.
There’s different types of creoles, Haitian creoles, Louisiana creoles, African creoles so you might want to specify what ethnicity the food originates from. Creole is too broad.
Wait who made the food, it doesn't sound like they made it right. I've never tasted gumbo being overpowered by seafood it was even flavor of shrimp, crab, sausages, chicken and its well seasoned . These dishes needs to be redone properly cleaned and seasoned.
