    A tip I learned from my dad, mix your spice in begore second grind, that ensures that the spice is mixed in thoroughly through your whole batch

    A tip for doing the sausages, switch directions on every other sausage. That way the won't "untie" themselves :)

    I really envy you guys who can homestead. I'm too old now to do that, the physical work would be too much. All these shows and UA-cam videos really have shown homesteading. If I were 30 years younger I'd be doing it!!! Unlike a lot of homesteaders, you two really seem like you have an excellent grasp of what is needed. Good Luck!

    I love using old pallets, I've built many things around the house with them...headboard, night table, hallway bench, mirror frame, shelves, counter tops and also many things outside like a 8x8 shed , lots of raised garden beds, potato tower, dog house. I think pallet wood is awesome! :)

    I just found your channel a little while ago and have been binge watching. I am very impressed with you both, how you work together, and what you accomplish. Are either of you Italian? I ask because you function in the garden with many of your planting choices, with hunting, fishing and butchering, making sausage, pretty much everything like my rural Tuscan neighbors do here where I live. Anyway, this is a huge compliment btw haha. Thanks so much for your channel. I am learning a lot from you both and really enjoying the life you are creating and sharing. God bless you both.

    Beautiful sausages, guys. Thanks for sharing how to make them and well done!! We try to get free pallets every time we go in town. So far, we made our walkway from our house to the shed. That way we don't have walk on the mud when the ground gets wet and super muddy. Also, we used them to build skirting around our house and put green transparent stain to show the wood grain. It came out pretty good. We like it.

    You can get the grinder cold before using it too. Put it in a freezer or outside for the same reasons you want the meat cold.

    We’ve never tried stuffing sausage, always just packaged it in bulk. Maybe someday we’ll give it a try. Nice job!

    I have absolutely loved binge-watching your shows after they showed up in my suggested feed! I do have one suggestion about the stuffing processes, I know it makes my family's life easier when we use two butcher twine knots between the links to make sure they don't unlink while you twist and turn to fill, and then it makes it easy to cut them once you're done.

    It's been almost 30 years since I processed my own pigs. We're fortunate enough to have a good family owned shop nearby. But watching you is making me rethink my plans for the 2 feeders outback.

    Nice, just a quick tip. Mix in the salt and spice after the first grind then it gets well mixed in during the next grind. We usually only grind once and mix all of the spices with the meat and then grind it and mix by hand slightly afterward. Enjoy!

    If you had have added 2.5% by weight of salt, you could have cured the sausage and made salami, salami needs several days at 70 deg then a cooler temp for the duration of the cure round 50 to 60 will do, the warmer temp is to encourage the formation of lactobaccili to then the cooler temp is to allow for longer term fermentation. It is realy easy and you will be blown away by the results.

    Great job on the sausage but curious why you didn't do the breakfast the same way. As for your smoke house, a great temporary solution is to use an old refrigerator. The chimney goes in the back to let the smoke out, you've all the nice shelves inside and you build your smoke fire in the separate bottom drawer. Works great.
    If you ever get anyone from the local tribes to share with you the recipe for their sausage, you're in for a treat. I used to go hunting in the Northwest territories and Yukon and would always get my allowed 2 elk made up in sausage. A delicacy of the north for sure.

    I am enjoying you two very very much. I lived in Ft. Nelson for eight years in the mid 50s and early 60s and you have me reliving so much - not saying the situations are the same but similar enough for me. Moose hunting, hotdogs roasted over a fire in winter, getting firewood for a much larger home (usually fire killed) and the joy of being able to go out in the early spring with short sleeved shirts on.     For your dinner sausage try keeping some of the large grind back. Add it back into the mixing stage. The combination of textures is quite nice.
    Adding some of these cranberries would have been nice.

    Next time you should try cleaning the intestines or bungs from deer/moose/pig and use all natural casings. Better for so many reasons. If its too gross which it deffs can be lol you can also buy salted beef bung and theyre super long and easy to make. Also, if you want a finer texture ever, try kneading the meat by hand or in a mixer.

    Hi guys, a tip from a butchers son. When your stuffing the casing use your left hand over the casing and the tube and regulate your fill by varying the pressure you put on the casing to get the fill you want and then use your right hand to guide the filled casing and twist as necessary.     Wow, great job guys. We were glued to the screen. Love the time lapse also. A smokehouse would be so nice. Doing some of that sausage in a smokehouse...hail yeah! We really like how you put all the veggies in the grinder as well. What a perfect mix.

    I just subscribed to your channel. I like it very much. If you don't mind a little tip from an old guy, I cut my meat in 1inch to 1 1/2 inch cubes and then add the seasoning. Stir it in good. and the grinder will do the rest. It will grind the seasoning into the meat more evenly. Especially if you are doing a lot of meat. If I'm making summer sausage, I season the meat the same way and let it marinate in the fridge over night. I enjoy seeing young people knowing and practicing survival skills these days. Keep up the good work.

    looks great! I add seasoning to the chunks of meat then grind,this mixes it really well,and is so easy,the exception would be if you put encapsulated acid in your meat.

    You should find out how to make "smoked sausage" or German sausage which is really ripe sausage from German Russian Mennonites in Central Kansas. It is so good. It usually has smoke flavoring in it I've heard. It makes it deliciously different. Try it sometime. Then, you bake it.

    I'm glad I found this I just got a sausage grinder thing for my kitchen-aid. I haven't used it yet I need to get some suet or leaf fat form somewhere... maybe it will fall out of the sky. I asked the butcher and he didn't know what leaf fat was and meat gets to them in large vacuum sealed bags. Silly me I asked if they got sides of beef. I'm glad to know it takes two people I was wondering if I needed a few more hands.

    The ingredients sound great, nice to get some fresh ingredients in there! Maple syrup! Those propane tanks last longer than I would expect, we were thinking of going a bit bigger when we get a tank, for the same uses, but maybe not after watching this.

    I’m laughing, why you ask? Well it’s all about the pallets. A little story. Back in the real world. My wife wanted and did make crafty thingys out of pallets. We were in the transportation industry so they were a dime a dozen. One of my customers saved us some. We hooked up our trailer and headed to town. By the way it’s an 18’ equipment trailer. Well we ended up with 8 stacks of pallets about 15-20 high. Ugh now what? Wife has lots of work to do. Our backyard looked like the pallet store. Also I should throw in there that we were on a 1 acre subdivision of semi custom homes. Yeah! Our neighbors thought we were a bit strange and some didn’t like us. Great video. You guys are doing good.

    Great job,
    If you put all your ingredients you wish to add in after your first grind,you will get a better mix with less work.

    hey guys with the pallets ...may I suggest a composter or an new shed for the solar batteries ( base, sides airflow etc ) just a thought ....or a wall with chicken wire for strawberries ...beautiful smokies

    When we do sausage links, we stuff enough for 3 links then just spin the middle link, after alittle time they can be cut apart with out tying any thing, thank for the video ,al

    After reviewing other videos you have made about scrap meat for dogs. You should blend the meat/fish/organ meats intended for the dogs into a sausage that fits their meal requirements in regards to size. I love your videos, two hard working people. Love ya.

    Next time try to add the spices before grinding. Mix welöl and start grinding, the meat will just soak up the spices and will even taste better.

    Homemade food is the best! Do you guys can anything? I'd love some canning vids. i bought a presto 23 quartz from USA and i live in Norway. but i havent had the guts to try it yet. Im scared its gonna blow up on me lol.

      Tone Andersen, yes we do quite a bit of canning and plan to make videos in late summer/fall when we harvest most of our food, it can be intimidating at first but I personally would just read the manual your presto canner came with, it will have all the details :)

    Minced meat with sugar and maple syrup... To this day it didn't even occurred to me that you CAN mix those :D. Where you got the idea from? It's a common thing in Oregon and/or Alaska?
