  • This dense and moist bread is one of my friend Rebecca‘s go-to treats because it is simple, tasty, and quick. It is very egan, oil & gluten free, and reminiscent of old-fashioned banana bread, and muffins. For the photo I scattered cow nibs on the finished loaf.
    The recipe makes one 9 x 5 loaf, or 12 muffins.

    Dear Nan. Thank you for the delicious recipe you brought today. An interesting combination of bananas, applesauce combined with oat flour. I will make muffins out of them because I found a healthy Nutella recipe today. Shabbat Shalom.❤

      Dear Nan. Today I made the cake. It turned out very tasty. I even completely gave up added sweetness (maple syrup or dates). I added walnuts and pieces of 90% dark chocolate and it came out with a delicate sweetness. I made the homemade Nutella from hazelnuts, dates, and cocoa. I will spread it on the slice of cake for variety. By the way, this is the first time I have made a banana cake. I will pass the recipe on to my son who loves to bake and invent sweet delicacies with bananas.❤🌻

      Hi Rina! Thank you for letting me know how this turned out, and what alterations you made. Sounds delicious.
      I made it as is, cut very thick slices which I then cut into thirds. So I have these cubes of banana bread in the refrigerator that are so tasty With a cup of tea, or for a touch of dessert. How brilliant to make your own Nutella.

      Healthy Nutella recipe.
      Ingredients
      1. 2 cups raw hazelnuts.
      2. 18 pitted Majhol dates.
      3. 1/4 cup unsweetened cocoa powder.
      4. A teaspoon of vanilla extract.
      5. 1 cup of non-dairy milk or as needed (optional).
      Instructions:
      1. Soak the dates in a bowl. Add boiling water and set aside.
      2. Toast the hazelnuts in the oven at 400 Fahrenheit for 10 minutes, removing the shell. Transfer the nuts to a clean towel and rub.
      3. Transfer the hazelnuts to a blender container or a fast food processor. Mix to obtain a smooth mixture. Scrape the sides as needed.
      4. Filter the soaked dates, and add to the container with the cocoa powder. The vanilla and 1/4 cup of water (or non-dairy milk) mix on high speed to obtain a smooth cream like Nutella.🥰

      Hi Nan, I made the banana bread. I am not impressed with this recipe. I checked my oven temperature with a thermometer before I put it in the oven. It took 1 1/2 hrs at 375 and was not light and fluffy. My was quite dense. How did yours come out???❓ Thank you.

    Hi Nan! Thank you for sharing the recipe! I'm going to be saving this one until the autumn and winter season begins.
    I don't do any baking or cooking during the late spring - summer months. I pretty much eat totally raw. We have a very short growing season here in Canada, so we must take advantage of all the fresh produce during this time. Since only 10 percent of my diet is cooked food l really don't miss it much. There's an abundance of energy and clarity when l eat living foods.

      It wasn’t wet, Donna, but it was moist and dense. Something like a chocolate brownie, but a bit lighter.🌻🥰🌻
