But they can cut Titan bone if the person is strong and skilled enough to do so. We’ve seen Levi, Mikasa and Reiner slice bones clean off with the ultra hard steel blades.

They explained this all the way back in se 2 for people that actually care to listen , titans are way less dense than animals that's why they can get away with being so big , not to mention specific adaptations to sustain that weight

And the spinal fluid is the core of all Titan powers. Maybe it's symbolic for that Eren has now the founder on his side, the very core, the biggest spine.
