Sounds simple and incredibly tasty. I love queso Manchego. I typically buy the 1 year aged version which I have pretty much just eaten directly. I will say one word of caution when flipping this, if you have any excess olive oil in the pan, you do run the risk of burning your arm when you flip this, so please be careful.
I’ve made this without cheese for decades after getting inspired by my Spanish friend who made it for me once. I will now try this with manchego…sounds and looks so delicious!

Mucha gracias Albert for another great video. Tortilla is besides Gambas Al Ajillio my favorite dish from Spain. I especially like it for breakfast in a local bar in Spain, or I cook it at home. In some dishes, I like to try new things, but with some dishes (not only spanish recipes), I want to stay totally traditional. So even though I am big cheese fan, for me, Tortilla is just potatoes and eggs, and maybe onions (and salt & pepper of course). No cheese, no parsley, nothing else.
I made this today and it was so yummy. I didn't have any fresh parsley but I decided to just add about 3 tablespoons of finely chopped green onions instead. It was great! Gracias for this recipe. Love ya!!
Brilliant, I never knew to prepare an omelette like this. The mixing the potatoes into the eggs & allowing it to rest before finishing cooking makes perfect sense. What a treat. Thanks for sharing.

This is a dish we make frequently, my husband loves it. La Tienda is my favorite place to buy Spanish ingredients. A few years ago, I was making versions of paella for family but really wanted more authenticity and flavor, La Tienda was a client at the call center I worked at so I was lucky to get a discount. Finally getting a proper paella pan and other things was a game changer. My in-laws have since passed but I still have the paella pan. I miss making it and gathering around the table with them for a feast with our local seafood. Whenever I watch your channel, I'm brought back to that time. It's bittersweet. I'm going to make it again, we have lots of delicious lobster, crabmeat and fish here that I like to add sometimes. Also, if you see this, can you tell me what kind of pan you use for the tortillal? I believe the restaurant was Restaurant El Guanche and they called the dish “Tortilla El Guanche”. I would love to know how to make theirs if you know how to make it!
I love a Spanish tortilla omelette! However, being raised southern, I fry my potatoes until golden brown and crispy with a pinch of sugar to help caramelize them. I also use bell peppers with the onion to add another layer of flavor. Buen appetito! An all time favorite any time of day!
I don't know if it still is, but it was popular at one time in Uruguay as "tortilla de papa". My mom used to make it regularly, and it's one of my fondest food memories from childhood. Can't wait to make it for myself.

Have used you Spanish Tortilla recipe many times and we love it! However, I’m not a fan of manchego so will be substituting gruyere when I make this later this week.
I know I would have a real problem making this dish: those fried potatoes look so delicious, I’d be hard pressed not to eat them right out of the pan 😂!
Just put,in different tapa plates, Spanish omelette,in another manchego cheese,( that is delicious on its own) and an Spanish delicatessen other tapas with the help of nice bresh and warm baguette,( pan de barra)
" CLASSIC" Spanish omelette with manchego cheese!?? Spanish omelette has always been the original, however, during the years,you can add ..what ever you want...like chorizo and all. Like people has done with paella! Be honest and say something like... Spanish omelette with a twist.😮
