  • Majkl shows us in this video how to grill a filled Italian bread. Majkl likes several fillings and in this video shows 2 fillings: sun-dried tomatoes with rosemary, and the other filling is fried pancetta.
    Normally, Majkl makes other fillings that taste also very good: camembert cheese and dried cranberries, roquefort cheese and dried plums, gruyere cheese and ham, olives and tyme.
    As far as the dough is concerned, Majkl recommends using his pizza dough recipe, for convenience, here it is again (makes 2 loaves of bread):
    400g flour
    175ml of warm water
    40g white yogurt
    25ml extra virgin olive oil
    1 tablespoon of sugar
    10g fresh yeast
    2 teaspoons of salt
    For baking bread on your grill, Majkl recommends the following:
    bake with indirect heat so that the bottom loaves don't burn.
    spray warm water on the loaves just before putting on the grill
    when you put bread on the grill, grill has to be cold
    because the heat source in grills is from below, brush the loaves with egg yolk, so that the final bread is golden at the top. You can also turn the load upside down during the last 5 minutes of baking/grilling to get a nice color on the loaves.
    Grilling: 200°C cca 25 minutes
