    Puto Bumbong is a type of Filipino delicacy that is made of white glutinous rice and purple glutinous rice also known as pirurutong. This is traditionally serve in Christmas season during the Simbang Gabi. You can see small stalls outside the church selling different kinds of "kakanin". The old fashioned way in preparing this rice cake is you should soaked the rice grain in water overnight and grind them the next day. It should be drained until you get the clay like texture and grate it. To cook this you pack it in a bamboo tubes and steam it. Serve in banana leaf and topped with margarine, muscovado sugar and grated coconut.
    In modern version of puto bumbong you can use metal cylinder steamer and because the purple rice is very rare you can just add violet food color to imitate the color. And if you do not have a bamboo steamer or metal cylinder steamer you can use a regular steamer, just line the steam basket with aluminum foil that is lightly brushed with margarine. Shape the dough into a log or a long narrow tubes and place it into the steam basket. Steam for 15-20 minutes over low heat and serve it with grated coconuts, cheese, condensed milk and leche flan.
    Ingredients:
    500g glutinous rice flour
    1 3/4 cups water
    1 tbsp violet food color
    1/2 tbsp ube flavor(optional)
    toppings:
    2 cups grated coconut(more if preferred)
    165g grated cheese
    3/4 cup condensed milk(more if preferred)
    6 small sizes llanera leche flan
    1/4 cup margarine(more if needed)
