  • Ingredients:
    2 medium Eggplants (sliced 1/4 inch thick)
    3 cloves Garlic (minced)
    1 large Onion
    1 can (400 grams) Marinara Sauce
    1 tsp Dried Oregano
    Salt
    Ground Black Pepper
    1 tbsp Cooking Oil
    250 grams Feta Cheese
    50 grams Grated Cheddar Cheese
    1 large Egg
    Dried Parsley
    400 grams Shredded Mozzarella
    Chopped Fresh Parsley (for garnish)
    Procedure:
    1. Cut ends of eggplants and slice into 1/4" thick. Lay slices on a rack and season with salt. Let it sit for 20 minutes. Flip, season other side with saltand let it sit another 20 minutes. Pat dry with paper towel.
    2. In a pan over medium heat, heat oil. Sauté onions and garlic. Add dried oregano, salt & black pepper and cook until onion is translucent. Add marinara and cook until warm.
    3. In a medium bowl, combine feta, grated cheddar, egg, dried parsley & black pepper.
    4. In a baking pan, layer the ingredients starting with the marinara sauce, eggplant slice, feta cheese mixture, and shredded mozzarella. Repeat layers.
    5. Cover with aluminum foil. Bake for 35 minutes in a preheated oven 400°F.
    6. Garnish with chopped parsley and serve!
