So something I would like some clarification on. Did the Anti-Monitor find earth 2 because he can sense the change in the timeline that Oliver created?

Probably not, the Monitor said Earth 2 is one of the few with dwarf star particles. He was likely destroying all such universes individually to prevent the Monitor from gathering them because both knew it was a useful weapon. Then after that, he had the cosmic treadmill powered to start destroying all the other universes one after another.
Basically, him destroying Earth 2 was meant to go mostly under the radar. But because the Monitor and Oliver were on that Earth, they were aware that the Crisis was about to start properly.
Don't forget Earth 2 is also where Harry Wells lived, and where there was no Flash (just a villain posing as one). So Oliver likely didn't change the timeline in any significant way for anyone to notice, it was likely the "grand scheme of the multiverse" at play like the Monitor suggested. Since Barry's time travel shenanigans affected people unrelated to him after trying to undo Flashpoint such as changing the sex of Diggle's daughter.
