    BLUEBERRY LEMON CAKE RECIPE
    (makes 15 pieces)
    Ingredients:
    1.5 cups processed oats, or oat flour (150g)
    1 cup spelt or whole wheat flour (125g)
    1/2 cup cornstarch (60g)
    2 tsp baking powder
    1/2 tsp baking soda
    2 large eggs
    1/3 cup maple syrup, agave or honey (80ml)
    1/2 cup unsweetened applesauce (130g)
    2 tbsp lemon juice
    1 tsp vanilla extract
    1 cup buttermilk (240ml)
    1.5 cups blueberries, fresh or frozen (200g)
    3 cups strained Greek yogurt (750g)
    3 tbsp honey
    NUTRITIONAL INFO (per piece with frosting):
    176 calories, fat 2.6g, carb 30g, protein 8.9g
    NUTRITIONAL INFO (per piece without frosting):
    126 calories, fat 1.6g, carb 24.6g, protein 3.8g
    Preparation:
    Preheat your oven to 350°F (180°C) and generously grease a half sheet pan (or a large baking pan) with butter.
    In a mixing bowl, combine the oat flour, spelt or whole wheat flour, cornstarch, baking powder, and baking soda.
    In another bowl, whisk together the eggs, your preferred sweetener (maple syrup, agave, or honey), applesauce, lemon juice, vanilla extract, and buttermilk until well combined.
    Gradually add the dry ingredients into the wet mixture. Stir just until the ingredients are incorporated, taking care not to overmix. Stop mixing as soon as the flour disappears into the batter.
    Pour the batter into the greased baking pan, spreading it evenly with a spatula. Give the pan a gentle shake to ensure the batter is evenly distributed.
    Sprinkle the blueberries evenly over the batter.
    Bake in the preheated oven at 350°F (180°C) for 25 minutes, or until the cake is golden brown.
    Allow the cake to cool to room temperature or let it rest for at least an hour after baking.
    While the cake is cooling, prepare the frosting by mixing together the strained Greek yogurt and honey in a bowl.
    Once the cake has cooled, spoon the yogurt-honey frosting over the top and smooth it evenly using a spatula.
    Refrigerate the cake for a few hours to allow the frosting to set.
    Serve and enjoy your delicious Blueberry Lemon Cake!

    Sasha, if I wanted to substitute oatmeal flour for almond flour, would the ratio change?

      @@HowToCookSmarter there are a few reasons, the most important not being anything you did, as my yeast may be past it’s prime. I genuinely feel that changed the entire end result.
      That said the largest factor in my family not loving it was the sweetness factor. This could be on my part as i may not have used exactly what you did but they just didnt feel it had any sweetness.
      While my family told me it wasn’t for them and little more detail, i will speak for myself. Personally i liked the recipe because it made sense and was easy but the sugars did not feel strong enough. It felt more like a bread that was sort of sweet and the yogurt frosting was a contrasting flavor, too much tang and it wasnt uniform. Although that can be fixed with better portions on my part.
      All this to say I genuinely liked this cake and plan on trying it again wth fresh yeast and some better portion work. If you have any tips to maybe make it a bit sweeter i would appreciate it. I want to get good at these to impress folks.

    What happens if I ONLY use oat flour for this recipe? Would the texture still turn out good and do I increase its amount for a total of 2.5 cups??

      Thanks a lot! For the egg replacement, well, I would use some extra applesauce, something like 1/2 cup, or even make a flax egg, I think it would work fine too.

      You can use any other starch, or even add some extra spelt, or whole wheat flour.

      instead of butter or oil. Sasha uses it in many recipes to keep the moistness without the fat and calories.

      I was told No but you can use almond flour, potato flour, sorghum flour. There are others but these are what I have used. Hope it helps.

      You can make a replacement for buttermilk by mixing in 1 tablespoon of lemon juice in 250ml of warm milk (it has to be warm but not very hot).
      Then leave it few minutes to curdle and use it as buttermilk

    Can I use self raising flour instead of oat and spelt.its really hard to find those ingredients.

      You can yse wheat instead of spelt, and oat flour can be made with rolled oats grinded to a powder in a food processor! If you look up "substitute for-" spelt and oat flour respectively on Google, there are websites that will give you the ratios you need since it can vary :)

      @@d6d6d6d61 thanks. Yeah, I knew that about oat flour. I tried to make it last time I made one of his sheet cakes but I ended up wasting all the oats I grinded because I couldn't get them fine enough 😮‍💨

      I would suggest you sift your processed oats next time, and it doesn't have to be 100% like store-bought flour.

    Your recipes are perfect for kids that need baked eggs (in baked goods) for building egg tolerance.
    It’s hard making sure my son gets baked egg everyday-there isn’t anything at the store I can buy that contain enough egg in it. But I also don’t want him to eat regular cake everyday!

    Good recipe, but honey and agave are straight up just sugar. Your body sees no difference between them and they are expensive alternatives people pretend are healthier so that's annoying. Just use sugar.

      Agave nectar has a low glycemic index unlike sugar

      Some of us can't have sugar as it causes inflammation but honey and maple syrup don't. Not everyone is as lucky to be able to tolerate white sugar and white flour so the comment of your body sees no difference is just completely false. Next you're going to say that we should all eat sugar because it's simply fuel in it's simplest form. Like yes maybe if we were all lab simulations but we arent
