Instead of shredding my potatoes (such a process) I just make a bunch of baked potatoes in the oven. Throw them in the fridge for the week and as I’m making a skillet or whatever I just butter my pan and take the potato in my hands and squeeze them and crumble them up. They brown so beautifully and it’s so quick and easy!
You should have a channel as this ice bath thing and grating the potato is making me really unmotivated…too many steps makes things far too complicated.
You can also get a food processor attachment to shred potatoes - super fast!

In case anyone else wants the measurements for the biscuits without having to pause 1000 times like I did 😅
2 1/2 c flour
2 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
Cut in:
2 1/3 c cold butter (maybe 2/3 cup??)
Mix in:
1 1/4 c bubbly starter
1/3 c milk
Roll, cut, freeze, bake at 450° for 20 minutes from frozen
Is that the correct measurement for the butter? 2 1/3 cups butter is more than a pound… I will have to go back and find out! Maybe you meant 2/3 cup?
So she says 2 1/3 cup butter, but that would not turn out. I think she misspoke and it should be 2/3 cup. The biscuits would be a puddle of butter with over a pound of butter in them!
@@EmeryShae yeah, I made them the way she says and it was wayyy too much. I wonder may 2 1/3 stick?? Or like you said, 2/3 cup? I'm going to experiment unless she replies. In the video you don't see her add the butter so I can't eyeball it 😭 lol

I feel the same way about mornings. I have always loved to wake up and get things done so at the end of the day I can be more relaxed as I wind down my day. It is why I tell my teenagers to please get the things done that they need to do early on, rather than later on. I am anti procrastination. haha.

For the hash browns you can mix with butter and seasonings and bake in a 9x13 pan until crispy and then add a quiche egg mixture on top and bake until done. So good ❤
We make egg cups in muffin tins with shredded potatoes as the base/bottom crust. They last several days in the fridge and reheat easily.

My mom always loves to make a hashbrown casserole with cubed hash browns, cheese (of any kind), and then she tops it with corn flakes or bread crumbs and bakes it in the oven! It's so delicious and easy to meal prep :)

A little vinegar or citrus juice, or even powdered citric or ascorbic acid if you have it (any sort of acid, really), will restore the color of the potatoes. Of course you don't typically want tart hash browns, but basically if you can find a creative way to acidify them, it'll help. You could add the acid then rinse them with fresh water if you're using them in a way that will tolerate the moisture, but of course that's not an option in this case. This also works for red cabbage and other foods that contain anthocyanins (red/blue shifting pigments).
Potato pancakes! (Latke) usually they are served with applesauce or sour cream but you can do anything with them!
Hashbrowns are great for a breakfast casserole!
I'd love to see ideas of "sneaking" veggies into food for kids that don't appreciate them!
Great video! Have been trying a delicious egg/potato omelet recipe from Argentina, it could work easily with the ingredients u like using; for 1-2 people use 3 eggs, and 2/3 cup of shredded potatoes at this time u can add onions, and peppers cheese, parsley; salt, pepper, go crazy with the ingredients u like using, beat the mixture then add to a cast iron skillet with 1 tbsp melted butter cook for 10 minutes on medium heat then flip and do the other side for 5 to 10 minutes. Serve with ketchup. Since you have a bigger number to feed you can double or triple the recipe. Have seen the omelet also be cooked in the oven instead of on the stove but guess depends on preference.

Actually russet potatoes lend themselves best to hashbrown making. They aren't as waxy as red or yukon gold potatoes thus lending themselves to a fluffier texture when cooked. The difference in texture also allows them to get crispier. It's kind of the reason why you don't see those typed of potatoes in french fries; russets just lend themselves to a fluffier texture while allowing for crispness.
I use hash browns as a base for egg bakes/skillets. I oil the pan, put the hash browns in, then essentially put all your egg skillet type things right on top. I usually mix it just a little to get the egg down into the bottom as well.
Great narration for this video 👏 Im interested in how you got around using paper towel for so many years. It seems basic but I struggle with cleaning strategies. Which cloth to use. When to put them in the laundry etc. I use way too much paper towel 😢

I'm like you, I try to save anything I have before it goes bad. I will juice my lemons and limes, put the juice in a canning jar and freeze it for when I may need lemon or lime juice but don't have the fruit on hand. Ice cube trays would be a better way to freeze it for more of a portion size, but I don't have any currently.

If you look up Spanish omelette, it’s a really tasty way to use up hash browns :) basically a frittata but with potato added
Avocado toast with egg on a hashbrown patty instead of a piece of bread is so good! (add a drizzle of agave or honey with red pepper flakes to take it to the next level!)

Hey Sarah, is not to do with the peel of the potato that turns them grey, it's because of oxidization. You can add some acidity to help restore colour.

Can you possibly make a video on how to make a sourdough starter? I know that there are a ton of recipes online, but just for that reason, I really don’t know what to rely on.

Hash brown idea: latkes. I learned how to make them from a UA-cam video on the channel called tasting history with Max Miller. I substituted almond flour for the matza meal since that's an ingredient I don't have. You combine potatoes, onions, a starch (like almond flour or matza meal) eggs, salt maybe pepper. Fry them up in butter or lard or schmaltz which apparently is rendered chicken fat. Delicious and everyone loves them!
Do you ever use russet for your hashbrowns? That's the popular potato for that where I come from. I'd love to see any plant based recipe for a hashbrown cass and a regular recipe for the same dish! I like to have things for everyone in my home and we have vegan and non-vegans. That may not be up your alley but it's a request! ❤️

Question-for the biscuits, did I hear correctly, it requires 2 and 1/3 cups of salted butter?
That is my question as well. I'm from Europe, we measure in grams instead of cups. Tried to convert the recipe but 2 and 1/3 cups of butter is more that half kilogram. That is a lot😮 Should it be 2/3 instead? Someone please help!
Hash brown breakfast “pizza” is super good, eggs and hash brown make a crust and then you can add any toppings you want!

I’m loving all your food recipes and when I saw you make sourdough biscuits, I paused the video, wrote down the recipe, and made them right away.
Mine were very buttery and mushy and I had to add quite a bit more flour. I’ll attach what I wrote down as your recipe and maybe you can tell me where I went wrong?
2 1/2 cups of flour
2 1/2 teaspoons of baking powder
3 1/4 teaspoons of baking soda
Half a teaspoon of salt
2 1/3 cups cold salted butter
1 1/4 cup of sourdough starter
1/3 cup of milk
Bake frozen at 450 for 20 minutes

I like to fry up frozen peppers. Add the frozen hash browns. Then crack the eggs. Yummy.
I always use leftover baked potatoes. I like to peel the skins off before grating mine.
You can do potato pancakes with that frozen potato - just tiny bit of egg flavour and potato . It’s gonna be crispy and delicious 🥰
I cannot eat gluten so I use a hash brown crust for my quiches and it’s lovely.

So if you just cut your dough into squares - you don’t have to reroll it out. I saw a pastry chef do it & ever since that’s what we do. It tastes exactly the same & is still pretty. When you reroll it out you can change the texture.
Besides your cast iron pan, what other pans do you recommend?

Hi Sarah! I love your new content and everything sourdough! I was wondering if you could clarify the biscuit recipe for me. I made it once but did you really mean 2 1/2 cups of butter? That’s 5 sticks I ended up having to add a lot more flour etc to the dough. They still worked out but I am wanting to make another batch and share this recipe with my cousin as well and I’m just wondering if you really use 5 sticks of butter?

Real feta cheese is made from sheeps milk, so good chance you will tolerate it the same as goatmilk products. No need to buy the special and probably expensive, goat feta.

You can use egg whites. Although, eggs are not bad in moderation.
Can make egg muffins with those frozen veg and hash browns
If you are ok with "rustic looking" biscuits you can just roll them out and use a pizza cutter to cut them into squares.

Potatoes grey when theyre frozen raw normally you need to flash boil them

I'd prefer to see a realistic full week of food i.e. with the cereal you buy and oats, bought snacks as well as homemade. Most people don't manage to make everything from scratch! X

I make food from scratch too, but I was commenting on what I'm interested in watching as I like to see the full picture rather than just the best meals 👍
