With the spring cohos, I like to broil them with Lemon Pepper and Paul Prudhomme’s Seafood Magic liberally applied- add a few pats of butter to the fish after seasoning and broil them till done, which only takes a few minutes. Once the fillets get thicker later in the season, it’s usually nice enough outside to grill them.

Favorite way to cook silver fish is on the grill with butter, Lemmon, and seasoning.
