EASIEST CHOCOLATE SPONGE CAKE / ONLY 5 INGREDIENTS

  • You are going to love how easy, light and successful this recipe is with only a handful of ingredients.
    You will need:
    for the sponge cake,
    6 large eggs 65g each
    3/4 cup of granulated sugar/ 150 g
    1 tsp baking powder
    1/4 cup dutch processed cocoa / 25 g
    3/4 cup cake flour / 80 g
    1 tsp vanilla extract
    For the cream filling and cover,
    3 cups heavy whipping cream
    1 tsp vanilla extract
    1/4 cup / 30 g powdered sugar
    3 tbsp dutch processed cocoa
    You will also need:
    1 cup of coffee sweetened and you can also add 3 tbsp frangelico/ hazelnut liqueur if you prefer. You will use this syrup to soak the cake layers for moisture and flavor.
    *If you don't like to add coffee, you can use a simple sugar syrup instead or even sweet milk.
    For the hazelnut filling/ praline:
    7 oz. of hazelnuts and almonds/ mostly hazelnuts
    1/2 cup of granulated sugar
    1 tbsp butter
    PREPARATION:
    Start by toasting the nuts and let them cool completely.
    Remove the shells as much as possible using a kitchen cloth.
    Cook the nuts with the sugar until sugar caramelizes and add 1tbsp of butter.
    Spread on parchment and. let it cool completely. Use the food processor to make a paste and save some whole to use as garnish.
    Mx the dry ingredients for the cake batter and set aside. Whip the eggs and sugar for 5 minutes or until light and doubled in size. Make sure the eggs are at room temperature for best results.
    Sift in the dry ingredients and fold very gently. Pour the batter in a cheesecake pan greased with butter, flour and lined with parchment paper. Bake at 350°F for 20-25 minutes or until a tooth pick inserted comes out clean.
    Make the chocolate whip cream by mixing heavy cream, vanilla, cocoa, sugar. whip until comes together nicely, don't over whip though.
    For the cake assembly, slice the cake in half and brush each layer with 1/2 cup of coffee.
    then add half the heavy whipping cream, 1 cup of the praline or hazelnut paste, spread evenly.
    Repeat with the other layer and decorate the way you want.
