Healthy VEGAN macaroni and cheese made from vegetables! (tutorial)

  • Hi everyone! I hope you enjoy this rendition of creamy mac and cheese that’s vegan and ACTUALLY GOOD FOR YOU. If someone told me it was possible to make macaroni and cheese that tastes good and is healthy I wouldn’t believe it, but it’s true! Let me know if you try this recipe out at home yourself!     Ingredients:
    12 ounces dry macaroni noodles or your favorite pasta noodles (I used red lentil pasta but you can use traditional macaroni noodles or make it healthier with rice noodles, black bean noodles, or quinoa noodles)
    1 small sweet potato or yam
    1 carrot
    1 small onion
    3/4 - 1 cup water (I used the leftover water from the boiled vegetables; start with less water and add more if your sauce is too thick)
    ½ cup raw cashews (soaked in purified water for a minimum of 20-30 minutes)
    ¼ cup coconut milk
    2 - 3 tablespoons nutritional yeast flakes
    1 tablespoon lemon juice
    1 - 2 teaspoon sea salt (or more to taste)
    ¼ teaspoon garlic powder
    1 pinch cayenne pepper (more to taste)
    1 pinch paprika
    Equipment:
    Medium Saucepan
    Medium Pot
    Spoon
    Slotted Spoon
    Blender
    Directions:
    Peel and lightly chop vegetables.
    Bring several cups of water to boil in a saucepan.
    Place sweet potatoes, carrots, and onion in the boiling water, and cook until tender and soft, about ten minutes.
    When veggies are soft enough to blend, remove them from the water using a slotted spoon and place them directly in your blender. Add ¾ cup of that cooking water to your blender, along with your remaining ingredients. Make sure to strain your cashews before adding them. Blend mixture until smooth. Pour sauce over your cooked macaroni noodles, season with additional salt and paprika to taste if necessary, and serve immediately.

    this looks so creamy and "cheesy", even though I am not a vegan I just hate how unhealthy a mac and cheese can be. This looks like the best of both words, healthy and delicious

    This is perfect! I made this the other night and added sautéed mushrooms & broccolini to the pasta / “cheese” sauce. Super healthy and reheated pretty well the following day for lunch at work :) thanks for the great recipes!

    oh my god I am positively drooling! and I do love mac and cheese, any variation. I have never tried it vegan style before but this looks so easy!

    I need to try this omg, I hate veggies but my mom use to puré them and put them in some crazy dishes (spinach brownies, cauliflower mashed potatoes, etc.) and they were amazing. I know it's in my head but I can't stand the texture of chewing it up myself and tasting it by itself.

    Since I moved to Texas, I find it difficult to want healthy foods because there is a lot of amazing treats out here to try. I should convince my spouse to make this with me so I wouldn't have to worry about cutting my favorite foods out of my diet.

      Totally try it! If you want a more "cheesy" flavor try adding more nutritional yeast. p.s. I love treats too 😪

    I'm getting back on track since my morning sickness has recently subsided tremendously. I disliked the fact that even healthy dishes were making me nauseous. 😟

    Looks Good!!! Might have to make this tonight. Kinda new to the Vegan thing. Wife and I watched "The Documentary" that just came out and thought we would try to eat better. 3 weeks later we are still going strong.....just looking for recipies....im getting tired of Veggie Wraps. Any good egg substitutes?

    What does the yeast add? And also, does it taste like cheese? If so, how? The mixture of the yeast with something? I’m so curious. Looks great :)

      Nutritional yeast has a cheese-like flavor, yes!

    I would love to do some of these dishes one small problem $$$ is there a inexpensive way to do it I'm autistic and I live on disability and I use my stamps what's the cheapest possible way I can do this

      Just take out the cashews, still pretty good... You can also sub the sweet potato with 2 small gold potatoes and it'll still be creamy and yummy.

    So you don't even eat cheeses, so you are a raw vegan.
    In case you will decide to eat at least cheeses, you could try make some "Pasta ai quattro formaggi" (i.e. four cheeses pasta) that is quite similar to this one.
    That because your bones need milk products, especially if you think that right after menopause female bones start losing calcium rapidly and prevention is the best medicine.

      I'm not raw vegan and I'm not even vegan I just don't eat meat and rarely eat dairy. Raw vegan means you follow a vegan diet and don't consume cooked foods. You can get calcium from sources besides dairy and milk is not necessary for healthy bone growth & maintenance. X

      Actually i myself don't drink milk too but i eat cheese and a big amount of veggies and dried fruit (that provide for calcium as well).
      Milk is an healthy food anyway bacause it contains useful nutrients.
      But those who say that milk is unhealthy are victims of a fake news.
      Clearly the osteoporosis is caused primarly by the sedentary life, and surely it is not your case, but nutrition has a primary role to prevent it.

      Oh, an interesting topic for a future video would be just this, dietetic trends. For us europeans is quite hard to understand the obsession of some americans for some food and dietetic trends, such as the recent one that is against carbs.
