We don't have Bellfaire (yet), but my family agrees that Spirecrest > Pearlbrook (although Pearlbrook is just fine). In our last game, we had a playpus and an axolotl riding a moose and a bear, respectively. Hard to beat that for sheer awesome.
Bellfaire add 5-6 player support which could push people to it. Also the new trade mechanism is very different and I like it a lot. I use the race power cards from bellfaire regardless of which expansion we play now but dont mix other content otherwise.
It depends on what you like in board games, but Bellfair is the one that delutes the game the least. I just wouldnt recomend playing with all 3 at the same time.
Ah it's tricky. We've had Everdell since Christmas and have played it a lot as my 8 yr old son really likes it. Gonna buy him an expansion for his birthday but can't decide. A might get Bellfaire just to add some variation to the existing game we like... and then get Spirecrest at Christmas when we might be ready for a real expansion..... Or should I just dive in to Spirecrest or Pearlbrook now!?

Watch out for the difference in collectors edition (in this vid) and the retail edition.
