I believe the problem you were having around 7:46 could be solved by moving the tangency handles of the vertices at the edge. By using the Edit Form tool and selecting vertices in the selection filter, then moving the red handles to modify the orientation of the form.

Great point and certainly possible! I did a video on manipulating the tangency handles. It isn't my preferred workflow because of the complexity of moving the handles and getting it right. It all depends on the shape you are working with I suppose. There is some inconsistency when using flatten on an open edge like that with the tangency handle.
If you try this it would be interesting if it behaves the same for you. If you flatten a shape like this and have the tangency handles go crazy, if you use edit form and manipulate the offending handles, then click the link option to reset them, I have noticed the go to where they should be rather than their original position.

If the plane on the box is creased, and perfectly flat, why there's no option to make a sketch on it ? because form stays dynamic and cannot allow anything on it?

you can after you finish the form and it gets converted to a brep. Until then its a bit of smoke and mirrors because yes its not "set".
