    Loved it!This is the only cheesemaking video I found where the curds don't get cut into pieces, but rather moved gently to the cheese cloth.I saw many videos about making traditional italian cheese(I'm italian)and in all of them they cut the curds,however I don't understand why they do it.When you break the curds you'll have a less pure whey and consenquently less cheese.Of course you can make ricotta with the cloudy whey,but you'll have to bring it to a boil and the final product won't be raw

    this is what i needed to help me decide if I should own a goat. you made this look easy. I will learn more about this process and care of the goat to see if i should move forward on this idea.     Wow, I wish I could live on a farm and milk my goat myself rather than buying it from my local super market. eating fresh organic is way better than what you can find in the store.I'm going to be a next superwoman making everything from scratch. I'm so excited. What an interesting lifestyle.

    I feel homesick. We had a cow called Imani where I came from but I sold it some years ago. My great nana gave it to me as a gift before she passed. Now I miss her. Say hi to your goats for me :D

    I'm curious as to how you would store the whey? Just refrigerate it?

    Předně díky, za všechna videa co děláte. Už jsem se z nich dost naučil a jsem rád, že máte velmi pečlivý přístup a nenatočíte něco, co jste zkoušel 3x v životě.
    Ale chci se zeptat na péči o sýr v lednici. Setkal jsem se vícekrát s problémem, že sýr "oslizl" namíst toho aby na povrchu oschnul. V lednici bohužel nemám ventilátor, a trochu očekávám, že to bude spojené s tím, že se prostě syrovátka neopařuje a naopak na povrchu vysrážená / odkapávající udělá na sýru "rozmočenou" krustu, která problém působí.
    Ale i tak se ptám na Vaši zkušenost, jelikož třeba máte taky nějaký test v lednici bez ofuku.
    (Sýr mám na dřevěných dřívkách a pravidelně otáčím. Stejně jako Vy jsem ho obalil v soli. Chuťově je výsledek senzační, jen ta doba uchování se mi nějak nedaří. Po 2 týdnech narazím na to, co píšu.)

    You look tired. Good video. One little trick I use when making butter is to whip heavy cream, let it fall, and ball it up in cloth. I use an old t-shirt because it is fine enough to let the whey out but keeps the butter in. It beats shaking a jar for 10 minutes.

    Hi, your video is very interesting and helpful. I have a couple of questions about goats cheese. I have a farm of about 18 acres and we have our own dairy business but which involves mostly cow and buffalo milk and milk products.
    We also have 5 goats at the moment and I was thinking of making goat's cheese on a commercial level. 1st is it commercially viable project? 2. How expensive are the cultures you used in making of your cheese?

    you can use cow's milk, but it wont be chevre. It'll be a type of soft cheese - and I'm sure quite delicious.
