At my favorite steakhouse locally they have a blackened prime rib with an amazing black pepper crust and they serve it with a blue cheese horseradish sauce and au jus. It's easily the best prime rib I've ever had. This looks really well prepared, but doing a bit extra to take that crust to the next level would be amazing. Good stuff Chef!

Would you consider that medium rare or medium well. It looks around 135f -140f, am I right. I was raised eating at well done. New to eating steak this way and trying to find my spot.

@@mrs.hatfield1451 Me too! My poor mom used to reduce double pork chops to hockey pucks! We lived near a pork/cattle farm that had a beautiful butcher shop Once I got older it pained me to see her pay top dollar for a prime rib roast then roast it far beyond what I recommended when she called me for “advice” 😂

Need to air dry overnite in frig on a rack. Fat should be about half inch or cover with half inch pork belly. Dry rub then smoke with cherry or applewood. Finish on charcol grill. Save fat for roasting veggies. Never ruin prime rib in oven.

Your roasting a deboned primal of ribeye 😫 as a butcher and steak enthusiast this makes me wanna cry.. deboned ribeyes are best cooked quickly as a steak, there is a reason people roast a 5 bone rib, the bones and the extra fat protect the meat and make it far more suitable for slow cooking and roasting.. this is such an expensive method and not optimal results. There is a reason we as butchers prepare ribeyes in so many different ways, from a rolled and boned 5 bone rib, tomahawk, cote de beouf and ribeye.. it isnt just for show 😂

Well really a deboned and trimmed ribeye should be used just as steaks, i am a butcher myself, for roasting a rolled 5 bone rib is much more suitable for even slow cooking or roasting, this crazy person thinks 5 bone ribs, tomahawks, cote de boeuf and ribeyes are just prepared differently for fun 😂
