I would love to see a series of the improved sandwiches you make with the ideas that this series has given you. Like when you notice the main and sauce of a sandwich go together but not much else does, I want to see you revise previously rolled sandwiches outside of the rolling format. Just you, the ingredients of your choice from a sandwich you've already attempted, and whatever you think would make it work. I need to see the sub-par sandwiches turned into tens.

Tbh, with all the "I wouldve done X differently" statements, id really like to see something like a "Roll for Sandwich: What If" Series, where you basically fine tune a sandwich you had so we could see how your proposed version would taste.

The gluten in wheat flour adds elasticity which helps bread rise. The gluten-free substitute flours don't work as well so the bread ends up smaller and more dense with the same amount of ingredients.
