I just went on a hunt in the city today to get all the ingrediences/spices. This already was an adventure. Cooking the recepie was a lot of fun, not too difficult and with a very tasty outcome. I am a big fan of the middle eastern cuisine and I am so happy I now know how to get these flavors at home. Thank you guys for this amazing channel. I will continue love watching it! I send you a big hug from Switzerland! By the way: I exchanged the prawns with chicken - turnend out great! And replaced the dill with parsley - was also great!
As a Bahraini this is my favorite Machboos, and as a person who just eats Machboos and never cooked it I'll make sure to make the shrimp stock whenever I try to cook it cuz yes umami.
These are just lovely & I enjoying the commeroderie - thank you; It's been interesting to rethink some of these for my vegetarian diet - the rice looks amazing & the book has been a treasure to read through as well.

Aaaah, then you have not reached the stage where you may pick YOUR favourite. Even if you travel far and wide until the end of your life, you still will NOT taste EVERY cuisine the world has to offer, so don't be too hasty to choose!

Is it at all traditional to find vegetable machboos or something of the like? I love a spiced rice but I'm a vegetarian. Still, I'd like to try an authentic iteration of the recipe.
Is your cooktop electric or induction? Redoing my kitchen and do not have gas available . Love watching your show - last month I purchased the new cookbook!
Hello Noor - I love watching your process. You and the rest of the kitchen crew are very entertaining. Hopefully people learn they don't have to be slaves to a recipe. That said, I think it would be of help when an unusual ingredient like black limes is used to suggest a swap. I've never seen one, so I'm curious how close they are in taste to regular limes. Is there any similarity? I'm of Lebanese descent, so I'm happy to say my spice and herb shelves look a lot like yours. I've been making that burnt eggplant dip and absolutely love it. I hope your channel continues to grow.
Hi Virginia, thank you for the lovley message. If you can't find black limes, you can use other dried limes (like the paler varieties). It's widely available online as well but if you don't have any on hand, you can omit it from the recipe. Black limes add depth to dishes but the recipe will still be delicious without it. We hope you enjoy the recipe!
I'm sure Yotam agrees with me :) but Noor has to be literally the prettiest (and cutest) person i've ever seen. Are you guys just taking a break from filming? Hope to see new videos soon!

You can definitely swap for other grains (brown rice, orzo, bulgar, freekeh) but cooking time and liquids will need to be adjusted. Let us know how you get on.

I'm not a fan of basmati rice- what else could I sub in (orzo, short-grain rice?)
