Also, a couple questions: Is there a reason that you didn't fry the onions, garlic and chicken in the same pan, separately or together? Seems like it'd be a good way to use less pots. What are the rectangular bread like things that you put in the bottom of the pot before layering with rice and chicken? Are they hard at first? Do they get soggy from the water? The saffron liquid, what is in it? Is it something you buy premade? Is it saffron threads that you soaked in a liquid? Is the liquid water or oil?
