excellent question ... that is the au jus from the pigs ... They par roast them collecting the drippings and then when ordered they will fire them in the clay dishes while basting them in their juices ... I would say they are roasted for about an hour and fired again for about 15 minutes.
From time to time I get this comment, and when I'm not travelling I am a professional editor so I definitely take it to heart. I never know exactly how to take the criticism thought ... on one hand I dislike the old style of slow pans and languishing on a shot. This is how I see the world; frantic and exciting ... and I know many people get it because it does win awards and such .. but still ... I wonder if there is a middle ground. "Den Gyldene Freden" in Stockholm. They served food and drink continuously at the same location since 1722 making it the oldest restaurant in the world as far as I know
A classic for sure, but, alas, it is the second oldest per the Guinness Book of world records, even per their own Wiki page ... but happy to say I've been there as well, Stockholm was one of our favorite cities ... They definitely have many tasty dishes you will be able to eat.
Damn, really made me want to go there. I love pork. The look of the building is super cool as well.
Cant recommend it enough ... just a one of a kind experience and damn is that pork GOOD.
