Simplicity at its best, the French Tarte Tatin is basically sugar apples and pastry, yet it tastes out of this world! This French Tarte Tartin recipe is the thicker one, placing the apple pieces vertically for a higher impressive looking apple tart.

Originally it was cooked in a copper pan with coals placed on top, today any oven proof pan or dish will do the job. No one knows for sure the exact history of the Tarte Tatin but there’s reason to believe that it was created by accident at the Hotel Tatin in France by overcooking (caramelising) what was suppose to be the apples for an apple pie. One of the Tartin sisters tried rescuing the overcooking apples by placing pastry on the top and turning it upside down. It was still served and the hotel guests loved it, a new dessert was born.
That’s why, never be worried about making mistakes, that’s how some of the best creations came about.
French Tarte Tatin is usually served warm, the traditional Tarte Tatin is not made of puff pastry, has no cinnamon, raisins or any other added ingredients. It works perfectly as it is. Although I did add some cheeky star anises in the caramel, as it does give it an extra something.
I like to add the serving of a quenelle of vanilla ice-cream on the side I feel completes it, but that’s just me and I’m sure traditionalists will disagree.

why when i add the butter to the melted caramel it doesn't mix well? even if i stir immediately both with spatula and shaking the pan?

Hello. I tried this amazing looking recipe yesterday and it was a complete failure for me! I just don't know what happened or where it all went wrong, but I could never get the caramel to come together with the right color and consistency, and I gave it three attempts. On my first try, I got a beautiful color but it tasted burnt and the caramel set up VERY hard...like brittle. On my second go, I couldn't get the sugar to properly liquify and boil....it just got dry and pasty. Maybe I didn't add enough water initially. On my third attempt, I got my sugar to liquify but it took a very long time, like maybe 20-30 minutes to turn brown (I was afraid to burn it, so I simmered it). When I added the butter and swirled to mix, the butter never seemed to fully incorporate, and actually become separate, like an oil slick on top. The mixture was very pasty and never really turned nice and brown. Now I am a seasoned baker, pie maker and really excel at making amazing crusts. But my attempt at making this crust resulted in an overly sticky and soft texture, and difficult to roll. When the tart went in the oven, the crust literally melted into the apples, rather than sitting on top of them. I'd love to try this again, but I lost some confidence yesterday, as I've never had a recipe fail me so much. I'd love your suggestion on what may have happened. thank you so much.
Hello dear. To make caramel, you need to reach 245F or 118C. If you don't have a themometer, use a spoon to place a drop of syrup in a glass of cold water. Once the caramel forms into a firm ball (but not a hard one), you can add the butter. If it forms a hard ball, you've gone a little too far in the caramel game. At least, that's how I make caramel if I don't have a themometer. I hope this helps, my dear.

I made the recipe today without the star anise and it worked out very nicely. The presentation was nice, the crust was almost like a shortbread, good crumb and firm next to the caramel. My first attempt at the caramel went south, but it was because I did not have enough heat under the pan. Second attempt was much better, but I needed another minute or so to darken it a bit.

I made about 10 recipes from this channel in last few weeks and each one was a huge success... and this was my first personal failure. 😅 Will taste good, but it has so much liquid for some reason when I flipped it. Need to figure out what I did wrong. It is also the first dessert type of recipe.
That's a shame, it's such a beautiful dessert. Did you under cook the apples before adding them in? (They should be half cooked, still firm) Did you use the wrong type of apple that breaks down and releases juices?
@@recipe30 Unfortunatelly I didn't find the apples you used so I bought jonagold. It's also possible that it was undercooked. However, even in mushy form it tasted good. Btw, thank you for all the videos which are easy to follow. My favorite yt channel when it comes to food and I definitely learned tons by trying different recipe every few days. Some of the dishes were the best I ever tried.
