I mean, I wouldn't wish those on anybody, but since the vast majority of us struggle with these, it's nice to see that you can get professional results, in whatever kitchen you have. Also, I've been contemplating getting a cat. My very biggest issue is that they can jump. I have a girlfriend who has told me that you can keep them from doing that. The editing on Claire's videos is the closes thing to what BA used to be. I really wish you guys would all form a new company together and do your thing.
While I would love for them to be together for my own nostalgic reasons, they each have unique ideas that would probably differ through delivery. Their only common audience would be BA subscribers from the past. What if some of them had been wanting to branch outside of that? Different editing styles, different formats, different audience... What if some of them had been wanting to break out of the expectations previously set by BA?

Claire. Last night while I suffered through insomnia, I watched/listened to several of your videos. When I finally dragged my tired ass out of bed this morning I went right downstairs to pull out ingredients to make this. I am tired, so so so tired, but by tonight I will have tarte tatin and that is ALL that matters.
ADDENDUM: I made this. It took me 8 hours...my entire Saturday and let me say: It came out BEAUTIFULLY. I did have to redo the caramel, because I totally messed it up the fist time. BUT, this thing came out so AMAZING!! I am an amateur home baker AT BEST, but with your directions and Felix's cute face, I got it done and I am SO proud!! Nothing stuck! My crust was perfect! I've never had such perfectly cooked apples. I could cry, it was so good.
This is the opposite of the showy, slick set of BA (and it was most definitely a "set", not a kitchen). But she's getting over a million views here because the CONTENT is first-rate, NOT because of slick visuals/constant droning repetitive music/yelling at the camera. UA-camRS! Take note. *_This_* is what gets you views: being brilliant at what you do, and keeping it simple.

@@tati.l. "Red delicious" is a specific type of apple. It's the one that looks like how most kids draw apples and it smells most like tetra pack apple juices, but when you eat it, the skin is really thick and the texture is mushy and sandy. :(
I’m making this today! Made the puff pastry the other day, cut off a little piece and made a cinnamon twist to make sure the pastry actually worked and it did!! So excited to see the finished result. My apples are in the oven right now ❤️

What a beautiful episode! I've made hundreds of tartes Tatins in my life, and I always love watching other people make it. My technique is different from Claire's, but my emphasis is also on having the apples absorb the caramel and having a nice flaky pastry. I'm about to master rough-puff for my next Tatin. Julia always told us when she was teaching exactly why she was doing each step the way she was doing it. Claire is also a great teacher because she shares her thought process - including worries, mid-course corrections, and thinking on her feet - all the way through. Baking is magical. It's alchemy. But it's almost never a straightforward procedure, especially for the home baker.

I love the animated intro. Felix is an absolute doll. I have two cats and they bring such joy to my family's life. Seeing Felix prancing around while you bake is so real and true example of the quirky fun of being a cat owner.
See, if you're not in control of the caramel it's because you're willfully passing over control to the devil. We don't want that. And it's so easy to just keep an eye on it to make sure it doesn't burn.

I made this yesterday for Christmas and it was a huge hit, thank you so much for the amazing recipe Claire! It took a while to prep the components but nothing was very difficult, and the results were better than I could've imagined. I highly recommend everyone try it sometime!

Either way I think lots of people have experienced not having space to store the damn cake, which was too tall and too wide, we even got leftovers and ate it for breakfast several days after that. Or something like that.
Just made tarte tatin following this tutorial. Thank you, Claire! it turned out just as good looking as yours. One favorite surprise is the glaze--Wow. trying to figure out what to put the glaze leftovers on. This is my first successful attempt thanks to the step by step instructions and demo. I also had my own home made puff pastry--turned out delicious! I may never again make normal apple pie.

I just want to say, that your skill and techniques in how you make the pastry dough is spot on. Seriously. A use to be a Pastry Chef as well for 25 years, and it kills me when I watch videos of people working with that type of dough like its bread dough..Congrats!!

I made this yesterday for Christmas and it was a huge hit, thank you so much for the amazing recipe Claire! It took a while to prep the components but nothing was very difficult, and the results were better than I could've imagined. I highly recommend everyone try it sometime!

@@bergenswald At some point in my life my fridge has been too empty. Other times too full. Either way I think lots of people have experienced not having space to store the damn cake, which was too tall and too wide, we even got leftovers and ate it for breakfast several days after that.

Just made tarte tatin following this tutorial. Thank you, Claire! it turned out just as good looking as yours. One favorite surprise is the glaze--Wow. trying to figure out what to put the glaze leftovers on. This is my first successful attempt thanks to the step by step instructions and demo. I also had my own home made puff pastry--turned out delicious! I may never again make normal apple pie.
I was so excited when she pulled out Kerry Gold. It's a fav of mine and what I've been using in her recipes. Glad to know I was using a Claire approved butter!
