- Watch as Claire Saffitz makes foolproof tarte tatin and rough puff pastry, two recipes from her cookbook, Dessert Person.
For a recipe that is often touted as "simple," tarte Tatin is remarkably easy to screw up. Claire has made tarts where the apples overcaramelized and stuck to the skillet, stayed blond and released tons of moisture, or shrunk dramatically. Differences in the freshness of apples was always the problem. In this video Claire will show you a method to help coax out some moisture to help correct those problems and leave you with a delicious tarte tatin that is every bit as good as the traditional version. Claire believes this recipe with buttery pastry, caramel, and apples can not be beat in a dessert.

FOOLPROOF TARTE TATIN
Special Equipment:
10-inch ovenproof skillet
Ingredients:
7 medium or 8 Pink Lady or any sweet-tart, firm baking apples (3 lb / 1.36kg)
2/3 cup maple syrup (7 oz / 200g)
1/3 cup brandy (2.6 oz /74g), preferably apple brandy
2 teaspoons apple cider vinegar (0.3 oz / 8g)
1/2 teaspoon plus a pinch of Diamond Crystal kosher salt
1 cup sugar (7 oz /200g)
3 tablespoons unsalted butter (1.5 oz / 43g), cut into 1/2-inch pieces
1/2 recipe Rough Puff Pastry or 1 sheet thawed frozen store-bought puff pastry
All-purpose flour, for rolling out
Vanilla ice cream, for serving
ROUGH PUFF PASTRY
Ingredients:
3 sticks unsalted butter (12 oz / 340g), chilled
3 1/2 cups all-purpose flour (16 oz / 455g), plus more for rolling
2 tablespoons sugar (0.9 oz / 25g)
1 1/2 teaspoons Diamond Crystal kosher salt (0.16 oz / 5g)

I'm so proud of this one because I truly think it makes professional-level pastry results achievable at home. Tarte Tatin is hard, but this recipe breaks it all down. Make it for the holidays, be a baking hero!

Claire, your small kitchen, small refrigerator/ freezer, too many tools and not enough drawers, issues made my day. I mean, I wouldn't wish those on anybody, but since the vast majority of us struggle with these, it's nice to see that you can get professional results, in whatever kitchen you have.
Also, I've been contemplating getting a cat. My very biggest issue is that they can jump. I have a girlfriend who has told me that you can keep them from doing that. I have yet to actually witness a cat not get on the counter. However, I've been told that it's impossible to prove a negative. So...

This is the opposite of the showy, slick set of BA (and it was most definitely a "set", not a kitchen). But she's getting over a million views here because the CONTENT is first-rate, NOT because of slick visuals/constant droning repetitive music/yelling at the camera. UA-camRS! Take note. *_This_* is what gets you views: being brilliant at what you do, and keeping it simple.

I honestly never make desserts, especially one that calls for pastry. But I made it, and it was fucking delicious. My husband and I devoured the whole thing. And it was easier than I thought! Will definitely make this again in the future

While I would love for them to be together for my own nostalgic reasons, they each have unique ideas that would probably differ through delivery. Their only common audience would be BA subscribers from the past. What if some of them had been wanting to branch outside of that? Different editing styles, different formats, different audience... What if some of them had been wanting to break out of the expectations previously set by BA?

@@tati.l. "Red delicious" is a specific type of apple. It's the one that looks like how most kids draw apples and it smells most like tetra pack apple juices, but when you eat it, the skin is really thick and the texture is mushy and sandy. :(

I’m making this today! Made the puff pastry the other day, cut off a little piece and made a cinnamon twist to make sure the pastry actually worked and it did!! So excited to see the finished result. My apples are in the oven right now ❤️

See, if you're not in control of the caramel it's because you're willfully passing over control to the devil. We don't want that. And it's so easy to just keep an eye on it to make sure it doesn't burn.
Red Delicious apples exist for displaying in a bowl in hotel lobbies.

I COOKED it! It's the first time ever in my life when I ever worked with any kind of dough or caramel or pie, and Claire's directions made it very easy to make Tarte Tatin. It was delicious. I had guests the other night and when I got that first bite of the Tarte I honestly liked what I had cooked and I was confident that the guests liked it to

Made this as my sister’s birthday tarte in place of a cake and it is one of the most amazing desserts I’ve ever had.
God, I absolutely love Claire Saffitz content. Claire has taken scary out of the equation for a few things that I’ve always wanted to try to make. Her explanations and seeing that even for her it doesn’t always go right the first time are honestly super inspiring and motivating.

Since apples don’t grow in Puerto Rico I was unaware of all the types of apples there are. To me they were “red”, “green” and “weird colored apples that are not red but not green”. 😂😂

Pink apples are the best apples. Also any one that is red mixed with green. Most folks don't like braeburns because they are mushy, but I always throw one in a pie mixed with gala or jazz apples, pink lady, and EXACTLY ONE GRANNY SMITH, to have a mixture of soft and firm texture and the right pectin and acidity.

I just want to say, that your skill and techniques in how you make the pastry dough is spot on. Seriously. A use to be a Pastry Chef as well for 25 years, and it kills me when I watch videos of people working with that type of dough like its bread dough..Congrats!!

I'm waiting, with much anticipation, for Claire's book to arrive! I've also ordered a book for a friend and my sister.....so we can thoroughly "digest" the contents of the book. What I really, really love about Claire and her channel is that she is so down to earth and real. The mistakes are not all edited out, which actually makes me feel more confident. I love making new recipes and tend to beat myself up when they don't turn out. I'm totally impressed with this wonderful chef and beautiful person!!!

Claire. Last night while I suffered through insomnia, I watched/listened to several of your videos. When I finally dragged my tired ass out of bed this morning I went right downstairs to pull out ingredients to make this. I am tired, so so so tired, but by tonight I will have tarte tatin and that is ALL that matters.
ADDENDUM: I made this. It took me 8 hours...my entire Saturday and let me say: It came out BEAUTIFULLY. I did have to redo the caramel, because I totally messed it up the fist time. BUT, this thing came out so AMAZING!! I am an amateur home baker AT BEST, but with your directions and Felix's cute face, I got it done and I am SO proud!! Nothing stuck! My crust was perfect! I've never had such perfectly cooked apples. I could cry, it was so good.

I’ve been baking in some way since I was a little kid, but as an adult I’ve baked less to control my calorie intake. Watching Claire bake reminds of the simple joy of making something stunning out of apples, flour, and sugar.
