Ingredients
- 4 tomatoes
- 2 white onions
- 4 cloves garlic, finely diced
- 2 dried ancho chillies
- 1 tsp coriander seeds
- 1 tsp oregano
- 500ml (17 fl oz) chicken stock
- 2 limes
- 1 jalapeño
- 1 bunch coriander
- 500g (1 lb) beef mince
- 1 tsp cumin powder
- 1 tsp garlic powder
- salt and black pepper to taste
- 1 packet corn chips
- 4 large flour tortillas
- 200g (7 oz) grated mozzarella
Method
1. To make the salsa, add 1 white onion cut in half, 2 tomatoes cut in half, the ancho chilli, coriander seeds, and oregano to a pan over high heat. Develop colour on all sides of the vegetables before adding 500ml (17 fl oz) chicken stock and simmering for 12 minutes.
2. While the salsa is cooking, make the pico de gallo by dicing 2 tomatoes, 1/2 a white onion, a bunch of coriander, and a jalapeño. Place in a bowl and season with salt and the juice of 2 limes. Set aside for later.
3. Once the salsa is cooked, add it to a blender and blend until smooth. Set aside for later.
4. Place the pan used for the salsa back on high heat and add 2 tablespoons of oil. Once hot, add the beef mince and break it up. Season the beef mince with salt, pepper, garlic powder, and ground cumin, and fry on high heat until cooked through. Remove from the pan and set aside.
5. Place the pan back on the heat and add the salsa back to the pan over medium heat. Then add the corn chips and carefully stir through the sauce.
6. To assemble the burrito, place 1 flour tortilla down, then add a couple of spoonfuls of the corn chips and salsa, followed by some of the beef mince from earlier, then pico de gallo and grated cheese. Carefully wrap your burrito, keeping it as tight as possible, before toasting it in a dry pan over medium-high heat until you have a golden colour on all sides.

Literal decades ago, I watched Graham Kerr, the Galloping Gourmet, do something with a bench scraper. I asked for one for Christmas, and got it. I don't know anyone else in my family who has one, and none of my friends seem to have one in their kitchen. But I've used one in a professional kitchen, and it is literally my favorite kitchen tool. If you've ever tried to wipe a counter down after you've chopped broccoli, and had all the little flower buds just sort of roll around under the sponge, you will love a bench scraper!
I have and use a bench scraper! And I’m the only one in my family / friend circle who uses one, too!
I’ve never seen anyone else use one (except in movies / on UA-cam etc, but I mean in real life).
I don’t know why more people don’t use them. They’re so handy!

In New Mexico, we have “frito pies”. Fritos, red or green chili from Big Jim chilis, beans, meat, cheese, tomatoes, lettuce and onions. Some restaurants serve it right out of a small Fritos bag, and some will wrap it up in a burrito, similar to yours. It’s a local thing. Yummy 😋

We do something similar in Texas, except its Fritos, Texas chili, cheese, and onions, served variously in a Frito bag, bowl, or wrapped in a tortilla. No need for lettuce and tomatoes to get in the way.
East Texas, we had frito pies too, but they were fritos, a layer of chili, and cheese on top.

I saw that a couple of other people mentioned that you made a burrito de chilaquiles. This is totally a thing! You can get chilaquiles, as is (even better with a fried egg or 2 on top), in a torta, or in a burrito. Every Mexican mom or grandma makes chilaquiles, usually as a breakfast dish. You can also get them from street vendors. Chilaquiles are one of my favorite comfort foods- I just made some yesterday! Love to see you are DRY roasting your veggies & chiles on a DRY comal. This is the best way to get that smokey, slightly bitter, charred flavor that we love. You & babe have a permanent invitation to the carne asada. 👍

Everything is a dish! I used to be the head line cook at a pub and grub… one of my favorite things to do was to recreate pasta dishes into a burrito. Sometimes I’d copy and paste, IE, literally just put the pasta into a burrito. But other times I’d try to recreate it into a more “burrito” format. You can damn near throw anything into a burrito and have it come out great. Just gotta put the love into it!
