Somehow I can see this bit of pop culture being turned into a "Family Guy" gag. Peter Griffin would be in the Ford (the driver's voice reminds me of him), and the Chevy would be driven by....Ernie the Giant Chicken!
I am 99 percent sure you are right. I've seen stunts in Chips in which cars have been deliberately driven up grass inclines while skidding sideways - you can see the driver wearing a crash helmet and using what looks like a no-frills roll-cage.I know what I'm gonna do. .I've got this stunt on dvd - I'm gonna go to see a friend of mine who has a 50 inch HD tv - and watch the stunt over and over again on that fat screen!
The Chevy starts as a '66 and turns into a '68. Then, just before it crashes, it turns back into a '66. I think the Ford is the same car throughout the scene. There weren't that many '74 Galaxie 500's made.
Yes, the Ford is the same. SInce the 1974 model year was the last for the Galaxie/Custom 500's, Ford probably didn;t wanna bother with the high numbers.

I don't think so as there was no roll cage in the car. I think it must of caught a divet in the grass as it spun. Luckily for the stunt driver the car wasn't going that fast for the roof the cave in.
