In this video I created a delicious vegan meal with bold flavors of the Caribbean. Lentils and quinoa makes a healthier version of the classic rice & peas. Ingredients lentil rice & peas:
1 cup quinoa
1/3 cup dried lentils
1 1/2 cup water
1/2 cup coconut milk full fat in the can
1 tbsp better than bouillon vegan chicken base
3 springs fresh thyme
2 stalks of green onion / scallions
1 scotch bonnet pepper
Ingredients Jerk Oyster Mushrooms:
1 lb oyster Mushrooms
1 tbsp grapeseed oil
Cornstarch
Korean bbq sauce
Walkerswood Jerk Marinade

I’m sorry, I should have specified how long to cook on stovetop if you don’t have a rice cooker?
Cook until the liquid evaporates and the rice is soft about 30-40 minutes 👍🏽

Walkerswood jerk marinade and Korean bbq sauce.
The jerk marinade you can get in most grocery stores Publix Kroger Walmart.
The Korean BBQ sauce I normally purchase this brand because there’s no animal products in it. I find it at Asian grocery stores and my farmer’s market.

Thank you 🙏🏽 I use cornstarch because it doesn’t burn easily like flour and it has a nice thickening agent that gives the sauce a nice texture 😊

You can find a variety of mushrooms at your local farmers markets grocery stores or whole foods. Asian and latin markets will have them also 😊
There are also mushroom companies that will ship to you. Try to google to find them. 👍🏽
