You can try to install Android 11, however, the S7's achille's heel will always be the 3000 ma battery. You aren't even guaranteed that your charger will charge the battery fully after the install. Android 11 will likely kill the already sub-standard battery on startup.

Interesting I have a old S7 laying and its android 8 wanted to upgrade it with custom roms to 11/12, does this batter issue also go for android 12?

All its working but you dont write that the camera is losing 4K resolution in video mode :) I have only 1080p max video resolution :)

Boot loader is locked on the all US SD820 versions of S7/S7 edge (including the carrier unlocked S7 G930U/ S7 edge G935U), so no. The bootloaders on the international Exynos 8890 models (S7 G930F/S7 edge G935F) are unlocked.
