    I have been barbecuing for years. Even won a competition once. I subscribed to Master Class just to watch Aaron's method for brisket. At first I was disappointed. There didn't appear to be any secret to it. But I followed his method meticulously and... it was the tastiest thing I've ever made. Definitely worth it.

    I have Spent a good 8 yrs now trying to be a really Good Back Yard BBQ Cook, Dove into this thing head first to a Point of Spending $70K on an outdoor Kitchen with 3 Smokers. I got to a point last year where I thought I am pretty damn good at this. I then decided last October that I was going to tour the Southern US and try every famous BBQ joint. I flew Into Dallas and rented a Truck, and Drop to Oklahoma, at At Butchers BBQ, The Oklahoma Joes, then Went to Kansas City and ate at Slaps then Arthur Bryants.............I am feeling Pretty good about my BBQ at this point. I then went to Memphis and ate Central BBQ and Memphis BBQ Company. My Next move was Big Bob Gibsons and Michael Characters..........I am now Feeling Real Cocky. I took a few days to head to Louisiana and have some Cajun Food ( I needed a Break from BBQ) and then I got to my destination Austin Texas, I had Blacks, LaBarbeque, Louie Muller and Salt lick and at this Point I am thinking Damn these guys are good. I waited to to go to Franklins Last (This Guy is my BBQ Idol) I get there are 5:00am and I am 7th in line, had a great time with people from Denmark, Germany, Holland And Australia all flew in to have BBQ at franklins. I bought $800.00 of Food for all of us................And After having 1 bite of Brisket, 1 Bite of the Beef Rib, and the Smoked Turkey I then and only realized then.................I sucked at this BBQ thing. I was so dejected at that moment.
    I spent the good part of a 1/2 with Aaron, he took back into the smoke house and of coarse wouldnt really tell me much other than to buy the masterclass. I packed up the balance of Food, took it back to the Hotel and Vacuum Packed it and overnighted it home. I flew home 3 days later after going to Buzzies BBQ, Pecan Lodge bother where good, and bought the Master Class. The long of this Story is, it was worth every penny, I have spent the Last year perfecting my Brisket cook and the #1 thing I have taken from this whole experience is simply this.................If you want his level of Brisket.................buy your Beef from Stone Creek Farms, thats where he gets some of his if not all of his Beef and you will see a huge difference in the outcome of your Briskets. Best thing I did was actually find his source of meat. Yes his techniques help, But what was holding me back this whole time was that company's Meat. Snake River Farms does NOT hold a candle to Stone Creek farms Angus Briskets when it comes to flavor and texture...........................Its amazing Meat.

      Nice write up. If you hit Dallas again, definitely try Cattleack. I’ve had Franklin, pecan Lodge, and all three of these are up there. Overall I actually put cattleack #1. Brisket only - Franklin. I think one of Franklin’s sources may be Creekstone Farms out of Kansas.

    The amount of knowledge in the first 28 minutes is insane and you get to learn this while the sun is rising in the video in real time. His class is fantastic.

    I paid $90 for this masterclass, and that's how much 2 prime briskets cost before the covid-19 beef mark ups and shortage. The class tought me stuff that I wouldn't have learned even in my first 10 cooks. So it's definitely worth it in my book.

      I just paid (June 2020) $128 for a 16+ pound prime brisket. It has beautiful marbling but it is a far cry from prime brisket at $4.99 a pound that I can clearly remember.

    15 years of smoking, so I'm more or less learning Franklin's style. You can totally skip 1012 years of punishment by starting with a Franklin masterclass, especially if you start with a wood burning offset.

    Thank you for this video! I went on a BBQ trip from Japan to Dallas and Austin from August to September. Then I found a Labor Day discount and made the purchase. I'm back in Japan and haven't watched the masterclass yet, but I'm very excited to see your video. I'm looking for the best translation software because I'm not a native speaker and I don't want to miss a single word from Aaron lol

    This guy started with a little food truck. Now to get in his restaurant you stand in a line for hours and pray they don't run out before you get in. I watched all his videos on UA-cam over the years and enrolled in the Master Class. I learn something new every time I watch them. And my briskets now??? Off the charts good, baby!! Off the charts GOOD!!

    I've been grilling/smoking for the past several years. That helped quite a bit. If I were completely new to grilling, this would've been intimidating and I'd've gotten lost.

      That’s a good cooker. I have one also. I have not seen this master class, but I’m familiar with a lot of Franklin’s teachings. All of them will apply to any cooker, and the WSM is a good one to use.

    Yep...I've done the spare ribs three times now - insanely good every time...I'm doing more ribs tomorrow for some friends. It's gonna be the best ribs ever (again)...just follow directions and manage those temps and you're gonna be golden. Gotta get a brisket going one day soon!

      @@LouisPetrides my wife and I visited Franklin's in Austin Texas...waited in line for a bit. They were sold out of ribs, but I did get the brisket and sausage. It was literally life changing - so good that you had to look around the room and ask people "can you believe how good this stuff is?". Texas BBQ is amazing and Austin is a fun town. You gotta go!

    So the question is marinating your meat for so many hours is it also considered soaking someone at work is this agreeing with me that is not soaking it's marinating but I say it's both what do you think

    Hi. I'm absolutely inexperienced when it comes to Master Class. Seems like they currently offer a special where you pay 190€ to get access for two, for the price of one.
    I thought getting access costs only around 100$ or 90€?
    For hoe long can I watch Franklin classes then? Or can I download them?
    Also I read the meat smoking manifesto written by Aaron Franklin. Does the masterclass promote detail than the book?

    Question: if I’ve read his book cover to cover and watched all of his PBS videos a dozen times, is it still worth it? I have no problem spending the money if there’s enough new material. I just started cooking on an offset cooker (cooked on ceramic cookers for 2 years before that) and I’m still trying to learn fire management. Is his fire management chapter on a smaller backyard offset smoker, or is he using one of his giant catering/restaurant smokers?

      MasterClass is now only offering the All-access Masterclass instead of the single class. They're always trying to figure out what works when it comes to stuff like that.

      For now, Masterclass is pushing the All-Access masterclass. They may bring back the single masterclass in the future. No idea when though.

      We ate Terry Blacks on Friday and Franklins on Saturday. Franklins was absolutely better. It was amazing. The wait was long but felt like the party that happens while you wait for a concert.

    Did you get your Pitmaster certification? That's what I'm trying to find out is where the legit certification can be done. Do I have to drive out to Texas or Kansas City for a week vacation for some cook off event where they are doing certifications? I've found a few websites to read but nothing solid and still not sure which organization is the most widely recognized. It's something I'd like to have, so a short vacation to get it done would actually be cool with me and probably a lot of fun. Looks like KCBS (Kansas City Barbeque Society) is where you can get your KCBS Certified BBQ Judge.

    Thank you for this video. It's what I wanted to see. I still don't know though if I am in the league of bbqrs to invest in this class. I want to so bad, but $90 is a lot of money for me. I am sure though that it is well worth it. It's just hard for me to pull the trigger.

    Just a few corrections.
    The Germans and the Czechs did not bring barbecue to Texas. Barbecue came from the different native groups of the Americas including the Arawak, Maya, etc. The word barbecue even comes from the Taino, an Arawak group, Barbicu. That word then entered the Spanish language as Barbecoa and it then turned to Barbacoa. Then it managed to enter the English lexicon as Barbecue/Barbeque.
    What the Germans and Czech brought was their markets and cuts of meat from their style of butchering. The immigrants he (Franklin) talks about are pre WWII. Most of the German and Czech immigration came in the 1840s.
    Also barbecue sauce isn't a bad thing. Texans are the ones that usually tend to say that "If it needs sauce, it must be bad barbecue." But throughout the South US you have many states that do use barbecue sauce, like the N.Carolina's vinegar and Lexington sauce, Kansas (the typical thick sweet barbecue sauce people think of), Kentucky's black sauce, Alabama's (Decatur) white sauce, S.Carolina's mustard sauce, etc. If you watch Franklin's old PBS special (found on UA-cam) you'll see how he says that needing sauce is a sign of bad bbq, but in Masterclass he says he likes it now.
    In my opinion sauce ties everything up, especially with the vinegar cutting through the fat of some of these meats.
    There is also a slight difference between Texas and the rest of the south. As Franklin says beef is the main protagonist of Texas style barbecue while pork and chicken are it for the rest of the south. A lesser known barbecue is Santa Maria style, from my home state in California. Which is beef tri-tip seasoned with salt, pepper, and granulated garlic cooked over coastal red oak. This style is no sauce. Texas and California have the benefit of having a cowboy culture that came from the Mexican vaqueros (cowboys) and the culture of having herding and grazing your cattle compared to the south that didn't have that influence.
    I just wanted to share more info.

    Can you not do this class for $90 dollars anymore. It keeps saying you have to do all the classes for $180. I don't really have interest in any other classes

      Yeah, MasterClass are always testing new pricing out. In this case, they are offering the All-Access only and seeing how that goes. It's been like this for a good 3 months now.

      An electric smoker uses wood chips, water, and a heating
      element to produce smoke rather than an open flame, and the
      lack of combustion gives its smoke a much different flavor than
      a live fire.
