Another fantastiic video! Sometimes I equate food adventures to music. By that I mean my love of classic, rock, especially the blues infused such of Led Zeppelin, Eric Clapton, etc., etc. I believe it was American blues icon , BB king that once said, "If it were not for the "English invasion" of our blues music with incorporating it into rock and roll, our blues music would have likely died." It is also entirely likely that without the global reactions of our best food could have remained regional here without such international appreciation, esp. from the British. As with music, I'm reminded that it is often others discovering us that sheds new light on what we had in our own proverbial backyards to begin with.
I'm from Texas and that food looks legit. Glad y'all found some more good BBQ. Tip of the hat to CA seemingly doing Texas BBQ right. Edit: my guess was way off as well. I was in the $80 - $90 range, but thought the increase to that would have been more of the tax there. That did look to be a decent amount of brisket though, so I may have not considered that.
Oxtail is somewhat common in Soul Food. I’d definitely recommend trying them in a soul food joint rather than a bbq joint. It won’t have the Jamaican flavor you’d be used to. But you can always go to a Jamaican restaurant for that - they are growing in popularity not hard to find
Texas BBQ is a style, there are others. It is usually not as sweet and sticky as some others, at least back in North Texas beef country where I lived ,and is most famous for brisket. Typically sliced brisket was served with sauce on the side as a meat component with dinner sides while chopped was mixed with sauce and served on buns with "carryout" type sides like pickles and fries . Other meats can be BBQed but brisket and pork are the standards. Brisket should have bark,a smoke ring and should stretch a bit, like an accordion, and not immediately fall apart. It should not appear dull grey and squishy, that's probably been boiled to hurry it.
The pasta in the mac and cheese was radiatori ("radiators"). Just like a Brit to put beans on toast! I've seen stewed oxtails, but never BBQed. What a great idea! Oxtails are full of collagen, which turns to gelatin when cooked. Also, meat cooked close to the bone tastes better, and all the meat on an oxtail is close to the bone. Fatty meat is good with something acidic The acid balances the fattiness. The French eat goose live pate with cornichons, so why not BBQ with pickles?
it seems to be a thing but i will never understand why people complain about pork or turkey being dry, its still delicious to me lol i even look forward to nice sliced piece of turkey when its dry lol also as soon as i seen those beens, i thought theres no meat they must be sweat

A lot of Carribean restaurants cook Oxtail like Jamaican, Cuban, or Haitian food. We have a lot of them in Florida because of the Haitian population has exploded here in the recent decades.
Baked beans do not make for a Texas side, Unlike pinto beans with the brisket Drippings from the bbq pit on a slow pit. Simplicity is key with a great smoked meat. If the sides aren't good then the bbq will follow that in it self. All rolled up into one that is true Texas BBQ with a whole lotta love😉

The beef rib was probably more than half the cost. BBQ joints are awfully proud of it. It's good, I'm sure, but i usually go for the fatty end of the brisket or a burnt end and am very happy paying half the price. A pick2 plate (2 meats+2 sides) is about $30 in St.Louis. Very reasonable.
$135.00 for two people? That's robbery. Nope, go back to Terry Black's or any decent Texas BBQ place. You won't get dry brisket like that. No excuse for it. You didn't even get the banana pudding that you love so much. I lived in California for years. They do great tri-tip. But Texas does barbeque right.

If you went at a low time, that would explain the temp on the beans and brisket. Better to go earlier in the day or during the busy time so things don’t sit.

That brisket does look dry. Almost looks like a pork tenderloin! I know when I’ve had dry brisket that it’s been sitting too long.
