@@cyberpleb2472 Because it gives a better result and it’s easier. To cook a really thick steak on a grill to medium rare, there is going to be a ring of higher doneness all around the steak. This is unavoidable due to the nature of a grill or a skillet, so the inside might be rare/ medium rare while the outer ring is medium well. Sous Vide cooks the steak to the same doneness all the way through the entire steak, so it’s medium rare end to end for example. Then you just quickly sear it to get the crust, without overcooking the outer edges. It’s also much better if you’re cooking a large amount, since you can cook all the steaks simultaneously and they’re basically impossible to overcook or undercook with Sous Vide.

That actually the best way to do it. however, you definitely need to sear it again after the sous vide. Which I don't think Josh did. The best way to do it is to sear - sous vide - and then sear again for a very short time. And if you can only sear once (like Josh did), then yeah, you definitely sear last
