You will want to sous vide it to get the almost perfect "doneness" for your steak without needing much skill for grilling your steak into desired doneness. Is it time consuming? Yes. Is it worth it? Yes. If you are really picky about your steak, this method is the safest way to achieve it. Learn from Guga bro, he is good with that.

It's called a reverse sear. while it doesn't make the steaks look as nice, it makes them more evenly cooked, preventing a tougher outer layer under the seared crust.
Wagyu is much better than Kobe. When I was in Japan I spent a fortune on trying the best steaks and Kobe is pretty damn good but I personally liked Wagyu a million times better
Kobe is just wagyu from a certain prefecture (area) of Japan. Miyazaki is considered the "best" usually, but it also depends on the grade you buy and all that.

This is unavoidable due to the nature of a grill or a skillet, so the inside might be rare/ medium rare while the outer ring is medium well. Sous Vide cooks the steak to the same doneness all the way through the entire steak, so it’s medium rare end to end for example. Then you just quickly sear it to get the crust, without overcooking the outer edges. It’s also much better if you’re cooking a large amount, since you can cook all the steaks simultaneously and they’re basically impossible to overcook or undercook with Sous Vide.
Feel like this should be a blind ranking with a real stead thrown in there. Tell them after each steak of course, just feel blind would be better due to placebo.

The steaks look like they were cooked in boiled water, and over cooked. A couple of these Filet Mignon steaks, are the thinnest I have ever seen for a Filet.
Sous vide definitely isn’t a fancy version of boiling. Putting food in boiling water means it loses flavor to the water. Sealing it in plastic first prevents that flavor exchange. The problem was that Josh seared them before instead of after.
That's actually the best way to do it. But, then you have to sear the steaks again for a short time after you sou vide them. But I think josh only seared them before...which isn't the best. If you can only sear a steak one time, then yeah, definitely do it after

I live in PA and my dad lives in FL so we never see each other on my birthday, but he knows I love good food so every birthday he sends me a box of steaks and/or lobster tails and/or some other seafood type lmao. It used to be Omaha all the time, but the last 2 years he's been sending Kansas City steaks. Personally for me, I think Omaha has better quality of steaks and lobster tails.

Why did josh sear the steaks before the sous-vide stage. That doesn’t make sense because you would want to after the submersion cooking to develop I nice quick crust on the beef.
