    Greetings from a fellow sharpener! Great little system and great job on the demo & results. You may want to look into 1x30 felt belts for final strop. Ive had great results with a quick progression of those down to .1u. Well done sir!

    The knife bolster extends past the knife edge. In other words, the bolster is blocking the edge from the thing you want to cut when its on a cutting board. I guess you could grind down the bolster until it is flush with the edge and then refinish it with polishing compound. On another note, this is a very nice device you made. I think it would be a lot cooler is you added the Amish touch and made it to work without electricity. I'm thinking a hand crank or a foot pedal system.

    Thank you for adding the 'shave' and 'tomato' and 'the standing paper' tests. I know which video you're referring to, its those guys that sell and sharpen those high end knives in San Diego. (excellent guys BTW). How much practice did it take to get that angle just right? I tip my hat to you for a fine job.

    Nice little machine. I'd add a platen to sharpen knives or tools that have flat grinds like the Mora knives which are known for their sharp scandi grinds. Despite my suggestions, and that's all they are, as you made a cool sharpener. What I think people should take from this and other videos is that there are different methods and tools to sharpen blades and we should all be able to find what works for us.

      It's called practice, it's really not that hard once you've done it a few times. Even using stones, you can get a consistent angle with a little practice. Just don't be afraid of messing up the angle the first few times you try it.

    Looks like a Henkels 4 star chef knife to me. Maybe 8in variety and $100 at Macy's. These are high carbon stainless steel and have been in production for more than 40 years. I have a large set including 12 steak knives purchased 30 years ago in Germany. I use them all regularly. It is a nice cheap home made sander but it doesn't control angle. But you do get what you pay for. If you bought the knife for 30 cents you did very very well. They didn't know what they were selling.

    +Garage Geek, those are 1x30 belts, correct? Where did you get them from? I've had a lot of recommendations to try the Norton Norax belts but I can't seem to find anyone that stocks them in 1x30.
    While I'm at it I just searched Amazon for "cheap chinese" blue 5u diamond paste and can't find anything that looks like that either.
    Any help would be greatly appreciated!

      Hi Mark, Yes I use 1x30 belts. I bought mine from USKnifeMaker. I have tried a variety of belts and the NORAX belts are some of my favorites. You can find the diamond paste by searching for "diamond lapping paste" mine came in a variety pack and the blue was my favorite, you can find it in a single if you search around.

      Yep, trust a guy from Solingen: This is a J.A. Henckels / Zwilling (twins) chief knife. because of the handle I would say a four star. This is higher class: forged, not punched blade. ice hardened. Really a "better one" about 80 EUR here in Germany. de.zwilling-shop.com/Kuechenkategorie/Messer-Scheren/Obst-und-Gemuesemesser/Kochmesser-VIER-STERNE-ZWILLING-31071-181-0.html. For not hand-made one of the best in price comparable to Wüsthof Classic.

    • @raccoon6072

      1 micron = 0.001 mm.
      1000 grid --> 1000 particles in an inch --> each particle is ~ 0.025 mm = 25 micron.
      5 micron = 5000 grid

    I DO appreciate the home engineeriging, but it is easy to sharpen 4116 steel, but it doesn't stay sharp long. It's strength is it's weakness and it's weakness is it's strength.
    And as noted, that's very good Henckels knife.
    Making 4116 steel cut paper is easy and doesn't teach anything or prove anything

  • @ardwych4881
    @ardwych4881 4 роки тому

    Good. It would be useful to talk to every action you perform, such as - I flick the rubber-topped switch that interrupts the power line - the tension on the belt comes from the weight of the motor, not the ring screw adjuster, you'll remember that's for getting the tracking of the belt on the drive pulley centred - a paper edge cut is the age-old test of a sharp knife - the direction, push or pull, when grinding doesn't matter - the burr needs to be removed finally by belts of gradual finer ratings - etc.
    The Feather-Touch test. Nice.
    (UA-cam doesn't have a playback speed adjuster, or a jump-back or forward keyboard control, does it..?)

      I've found that ther's IS a speed adjuster on the Settings cogwheel on the UA-cam screen. And I've discovered that there ARE keystrokes that can control playback. They interfere with Firefox's 'Search as I type' feature, but you can't have everything.

    • @morayjames92

      how do you think that knives are sharpened at the factory? Are you suggesting that sharpening by had is not a great way to sharpen? Are you trying to say that only a fixed angle jig is the only way that a knife can be sharpened well? The demonstration shows a very sharp knife so what is it that you are complaining about?

    Push cuts are a much better test of your edge than slicing cuts on paper. A dull knife with a wire edge or burr will shave hair, so it doesn't prove much. What do you do in the woods after you are halfway done butchering your elk and your edge is dull, crank up your generator? Learn to freehand sharpen & get rid of the gadgets.

      If you can touch the blade with your bare hands without burning yourself, the knife isn't hot enough to lose its hardness.

    • @russellwalker3830
      @russellwalker3830 6 років тому

      Christopher Backus I was also told that color change is the tell tale sign of accidental annealing. Some artisans actually rely on this color to temper the shop made tools without an oven or kiln.

    • @christopherbackus5578
      @christopherbackus5578 6 років тому

      If the steel gets hot enough to change color, it's more than hot enough to give you a nasty burn. A light straw color will give you a nice edge holding hardness for most steels.

    OMG a chiefs knife and you are using a slack belt and have no Idea what angle you are sharping or if it is consistent with either side, let alone one side. This system is good for Walmart special knives, but thank god it is a cheap knife your ruining not a good one. have you ever heard of 14deg bevel on chiefs knives. of course not how would you sharping that way.

    • @christianandersen7458
      @christianandersen7458 6 років тому +3

      * you mean chefs knife. If you watch cliff stamps videos - you know better than to bad mouth freehand sharpening. Just because you and I suck at keeping an angle it does not mean that it is impossible for others. the exact angle is not that important just that it is consistent.

    • @michaelandersen5453
      @michaelandersen5453 6 років тому

      One, at least some one spells their name right. I make knives and many use a paper wheel to put a sharp edge on the knife free hand. But using a slack belt will round your edge not give you a even bevel through out. I'm not bad mouthing free hand bevels there done all the time in knife making just using a slack belt and getting a repeatable angle. angles are important for replicating the bevel for future sharpening. you don't want to recreate a bevel every time you sharpen. anyone can get a sharp knife. I have seen Burrfection put a sharp edge on a expensive (chefs) knife with a brick. so sharpening anything is possible if your technique is good. watch him if you want to see hand sharpening at it's very best. Just to make this more interesting I use a Wick Edge sharpening system to put an edge on my knives and put new edges on new knives. And I know I'll here about how you don't have to spend that kind of money to get an edge on a knife. Well I do that is how bad I am at sharpening and I have bought hundreds of dollars in sharpening systems over the years and now I have one that gets me consistency every time. that's just me.

    • @christianandersen7458
      @christianandersen7458 6 років тому +2

      Maybe he has just perfected how to do a convex bevel, a slight convex should in theory have a bit more strength. No I know what you mean, but Garage Geeks video is not interesting if you goal is to do repeatable, consistent bevels - but it shows that you can put together a reasonable grinding machine with reused parts. I own a scheppach wet-stone grinder similar to tormek, but the setup is a pain and I finally settled for a homemade lansky sharpner jig, napster gear was the one i saw and used as inspiration. sandpaper with a flat surface works great. (not like the wodden one napster gear uses though). Garage Geek could tension the belt, make a flat guard beneath and a propper angle-asist for keeping the angle consistent.
