Hi Bea! Not sure if you’re gonna see this comment but I went to culinary school and what they told us was if you change 3 things in a recipe, it’s considered yours. The three things can be either added/omitted ingredients, altered measurements or a combination of the two. I’m not sure if that’s still the case, but that’s what they told us. On older food blogs they used to say “adapted from X” but I don’t see anyone do that anymore. Hope this helps! 🦕 🤗
I don't know about the US but here in the UK you can't patent or copywrite a recipe. That's why the big companies like Coca-Cola and KFC are so secretive about their recipes, coz anyone would be able to use their recipe and they can't do anything about it. Dunno if it's the same everywhere ❤

Hi Bea, I’m an trained chef and I recommend using a baked russet potato to get a fluffy texture with gnocchi. The problem with sweet potatoes is they have so much water and when you boil them they still have way too much water to get the fluffy texture. I think they yours looks tasty too though, and I’m laughing too hard at “Douglas Beans” ….😂
Or if the dough have too much water you can scoop the batter directly into the boiling water so you don't have to use that much flour. It's more tedious but the gnocchi will be fluffy and extremely flavorful

the reason online recipes have the massive story at the beginning is that it is the copyrightable portion (and photos), not the recipe itself. It is a little more complex when published in a cookbook, but still usually the 'idea' (non-CR) vs 'expression' (CR) issue, where the recipe isn't protected (unless trademarked), but the description of the steps is.
Good to know! To be honest, I really only will use recipes from sites that include a button to say, "jump to recipe". I'm totally over the millennial writing along with all of its spellings, and misuse of expressions and clichés. I just want the d*** d recipe. So if there is no "jump to recipe button", I won't bother with a site. Thank you for filling me in on why they do that. I find those pages so annoying.

I’m a graphic designer and I worked on a cookbook for my company and I’m not 100% sure about what the “laws” are with recipes, but basically once you change anything in it you can call it your own. If you want to be forthright about it you can say “adapted from Sir Blahdy Blah’s Chicken and Stuffs Recipe” for example.

I used to work at Food & Wine and Epicurious and in early days, there was a whole kerfuffle around how much text from a recipe Pinterest was allowed to display on a pin, and so that's when the "list of ingredients is not copyrighted" legal thing happened.
if you want to not have to add too much flour to the gnocchi, you have to try to bake your potatoes the driest way possible, microwaving or steaming it are my go-to, they should be less gummy

My hubby would have been freaked out because once when we were in the woods he laid on the ground and a chipmunk ran up his chest - I thought he was going to have a heart attack. Just like in the National Lampoons Christmas vacation movie when the squirrel was in the Christmas tree kind of situation 😂 Your computer looks awesome! You can learn the science behind it from chef's and foodies but it's still YOURS. If you cook someone's shared recipe in YOUR kitchen, it belongs to you because, YOU paid for it, it's YOUR cook wear, it's YOUR choice of brands, it's YOUR hands that prepare it, it's the temperature of YOUR appliances, it's the quality of the water coming into YOUR house, it's the particles in YOUR air, it's the little inaccuracies in YOUR measurements, it's YOUR utensils, YOUR plates, and so on. A stick of butter and 1/2 a cup of flour cooked over medium heat for a few minutes, still makes a roux, and it belongs to all of us. Hey Bea! Gnocchi are so simple and versatile, I definitely recommend experimenting more with them :) I've actually never seen anyone add egg to the dough, maybe that's why it ended up being so sticky? Try mixing regular potatoes and different veggies like pumpkin/squash/spinach and adding diffeernt flours, I've had good results with spelt, chickpea and corn flour.
Have you ever tried making gnocchi with chickpea flour? I'm adding bits of chickpea flour to many dishes. I'm hesitant with gnocchi because if it doesn't turn out, that's a lot of food that would go to waste and end up in the compost bin.
I've never tried pure chickpea flour, only mixed with wheat flour. But I don't see why you'd have to toss the dough if it doesn't work well, you could still use it in some other way or just add more potatoes and some wheat flour to it to make it work. Or try a very small batch as a test :)

If you cook someone's shared recipe in YOUR kitchen, it belongs to you because, YOU paid for it, it's YOUR cook wear, it's YOUR choice of brands, it's YOUR hands that prepare it, it's the temperature of YOUR appliances, it's the quality of the water coming into YOUR house, it's the particles in YOUR air, it's the little inaccuracies in YOUR measurements, it's YOUR utensils, YOUR plates, and so on. A stick of butter and 1/2 a cup of flour cooked over medium heat for a few minutes, still makes a roux, and it belongs to all of us. Hey Bea! Gnocchi are so simple and versatile, I definitely recommend experimenting more with them :) I've actually never seen anyone add egg to the dough, maybe that's why it ended up being so sticky? Try mixing regular potatoes and different veggies like pumpkin/squash/spinach and adding diffeernt flours, I've had good results with spelt, chickpea and corn flour.
Have you ever tried making gnocchi with chickpea flour? I'm adding bits of chickpea flour to many dishes. I'm hesitant with gnocchi because if it doesn't turn out, that's a lot of food that would go to waste and end up in the compost bin.
I've never tried pure chickpea flour, only mixed with wheat flour. But I don't see why you'd have to toss the dough if it doesn't work well, you could still use it in some other way or just add more potatoes and some wheat flour to it to make it work. Or try a very small batch as a test :)
