- In this video we will see how to make Mutton Rogan Josh Curry. Mutton Rogan Josh is a recipe from the Kashmiri Cuisine and is filled with flavor. This is an excellent side dish for naan / roti. The Rogan Josh curry gets its authentic red color from a Kashmiri spice called "Ratanjot" but since I could not get it I used Kashmiri chillies to impart the red color. The mutton pieces are cooked in hot oil / ghee over a period of time instead of cooking in a pressure cooker. This process of cooking gives a unique texture and feel to the mutton pieces. The addition of dry ginger and fennel seed powder adds finishing touches to the recipe. The mutton is cooked when the meat falls of the bone. It is important to use meat with bones for this recipe because cooking for prolonged periods breaks down collagen in the bone to gelatin which adds the smooth texture to the curry.

I have been enjoying your videos because they simplify and show the entire
cooking process. I really enjoyed the butter chicken. My question today is
about mutton. Are you using Sheep/lamb/mutton or goat in your recipe? Are they
interchangeable?
In northern NJ Hispanic markets, the term mutton often refers to goat meat. In
non-Hispanic markets it refers to Sheep/lamb. In the Caribbean, I grew up with
goat stew or curried goat as popular dishes, however lamb was severed only
rarely (roast leg of lamb around Easter). When I looked online to see what the
term mutton called for in Indian recopies, there was no one answer and seemed
to depend on the region of India or world (UK). Also a lot of recipes listed
both as substitutes for each other.
In
your recipe, what meat do you use or prefer and what cut of meat do you use or
prefer? Also, do you cook with both?ThanksTony
Antonio Martinez in india they usually eat goat meat and for this particular dish shank part of the goat is used...

+Prabha Krishna Yes we have to cook in a low-medium heat. At higher temperature the muton gets burnt before getting fully cooked. All the best for the recipe. It will have a very unique taste. Hope you like it.

can I cook the meat in pressure cooker first then follow the process because I am sure the meat I find does not get tender easily unless pressure cooked first

+Akash Agte Unfortunately not. I have tried several times but the taste is very different. Lamb has a higher fat content and tastes much different in our traditional Indian recipes. Lamb recipes tend to taste better with slow cooking.
