tip yall when ur making it when u add the first bit of starch keep the heat on medium and cook until its sticky then remove add starch and kneed because that will give u a nicer dough to work with and u don't need to let it rest for 15 min, and u cok just puree the mango in a blender then add it to the pan and cook, the rest is the same
your dough seems like oobleck. you should actually add in the rest of the starch when the dough is still hot. once the dough cools down, it hardens which is why your dough looked quite like oobleck. it should feel like playdough !!
