I'm not gonna lie, it's gotta be pretty demoralizing to see Magnus play joke moves at the beginning and think "nah I got this: I can press my advantage," then slowly watch the game devolve as he improves his position and finally win. I think I'd rather he just crush me straight up.

That would make watching it way more exciting. “Yeah he resigned because of a mate in 7” okay? I don’t know? A lot of beautiful mates never get shown
You are misunderstanding, at the top level, they are already trying to get rid of draw offer, players are already smart enough (and by the nature of the opening knowledge) they know how to implicitely ask for draw by repeating move or going into known drawn variation, so if you prevent resignation, the player who wants to resign will just start playing anti chess and you won't get what you thought you would get because players are not there to satisfy you. And nowadays such tournament are covered and if there's a resignation because of a mate in 7, the mate in 7 will be shown in the broadcast, and the more you get better at chess, the more you see the mate in 7 yourself :)
