Yeah, you certainly have this dialed in. I did competition BBQ (KCBS) for many years....1996 through 2015, and we always did them the sticky method. A little bit different than how you show it, but essentially the same way. My neighbor who is a great cook does them the Grilled method, pretty much like you did it, and his are as good as it gets. How long does it take for the bbq to get to 120 Celsius? In my experience it always takes ages and I run out of time and then I put the ribs on probably too soon, when the temperature is not yet high enough. As a result the smoking process takes very long and the ribs get kind of dry. How do you do this?

Did you watch the same vid as the rest of us? All 3 tasted and all 3 looked great. The best one is obviously the one that looks best to you. In my case, it's the grilled.
