Making A Vinegar Pie From Scratch | A Delectable Desperation Pie | Southern Living From Home

  • Among the ranks of other Southern desperation pies, like our Classic Chess Pie and Old-Fashioned Shoofly Pie, is the delightfully tangy Vinegar Pie. Our recipe is elevated a bit with additions like vanilla and honey (things not readily available during the Great Depression), but we think these additions add depth to an already delicious pie during a time when those ingredients are more accessible.The sharpness of the vinegar is offset by the sugar and salt in the filling, lending a tartness and tang similar to cheesecake while maintaining the texture of a gooey custard pie.

    INGREDIENTS:
    •1 Single-Crust Pie Pastry Recipe
    •4 large eggs
    •½ cup granulated sugar
    •½ cup light brown sugar
    •½ teaspoon vanilla extract
    •6 tablespoons unsalted butter, melted
    •2 tablespoons apple cider vinegar
    •2 tablespoons honey
    •2 tablespoons all-purpose flour
    •¾ teaspoons kosher salt
    •Powdered sugar for dusting

    Other than a bowl of fruit it has everything, and more (eggs, honey). I don't see this as a desperation pie. It is actually quite rich.

    Try making vinegar pie with a half cup to one cup of chopped pecans, also it’s better with 3 T. spoons of A.C.V.

    First time I had vinegar pie was Thanksgiving of '96 I remember thinking it would be gross, but it was surprising good.

    Vinegar pie was eaten in northern Michigan in the 1860s.

    Tbh, vinegar pie... Just the name of it sounds like it would be disgusting. But looking at the ingredients and how the pie looks, it looks like it would taste quite nice. I would have to try it and see.

    Hi. Could i ask if I double the filling would I have to cook it twice as long?. Also how long would it take if I made individual pies using a muffin tin. Many thanks.

    This (and other "desperation pies") are not just Southern recipes. Even though I spent much of my childhood in the South, family is from way up north, and they always had vinegar pie, too!

      @@autumt7390 1 1/2 cups sugar(I use a brand called Zulka Marina, it has a slight molasses flavor), 3Tbsp All purpose flour, 3 large eggs, 2 cup buttermilk, 1/2 cup butter melted, 1 Tbsp loosely packed lemon zest, 3 Tbsp fresh lemon juice and 1 tsp vanilla extract.
      Preheat oven to 350°F. Whisk together first two ingredients in a large mixing bowl. Whisk eggs and next five ingredients into flour mixture; pour into pie crust.
      Bake at 350°F for 35-45 minutes or until almost set, shielding edges of crust with aluminum foil after 15 minutes. Transfer to wire rack and cool 1 hr.
