Love your mom's italian accent and the use of an Italian oven, nice bread looks delicious. Such ahame though with your strong rural ameriçan accent, never lose your culture.
I'm glad you enjoyed the video☺ Commercial ovens are not supposed to be installed in an enclosed space. There are strict requirements of distance between the oven sides and its top from other furniture because of the high temperature that this kind of oven generates. This oven model comes with an embedded pump and a hose. You just need to put the hose in a container with water. No need of connecting it to a faucet. So convenient! Hope it is clear

Hi! To have this oven working in my house we did 4 things: 1) making sure the oven is single phase and not 3-phase, since most houses do not have a 3-phase wiring (mine definitely doesn't). 2) making sure the oven voltage rating matches the house voltage (in my case 240v). 3) Plug the oven in a high current socket (in my case 15A instead of the normal 13A) 4) Wiring the socket of the oven directly to a dedicated breaker. You should not have any other appliances in the same loop of the oven. In any case the dealers of commercial ovens can offer all the assistance you may need on this matter. I hope it helps.
I am still experimenting, I managed to go down to 20 - 30 min. (Depends on weight and shape), but now I use a different procces than the one shown in the video. The beauty of it is that you can cook 2 loaves of 1kg at the same time in a perfect and uniform way. I prefer gas cooking especially for bread and pizza. But having a limited amount of space and living in a place where there is not much attention payed safety regulations, I felt safer with the electric one. My unox is not the ideal model for baking but the bread is still great, but i chose this model because it allows me to experiment with the greatest number of baking! You do everything with it!
@Mina helmy I write to you how I am set the oven now: preheating 240 degrees phase 1 time 5 minutes. temperature 240 degrees humidity 100 fan 1 phase 2 6 min 200 degrees humidity 100 fan 1 step 3 180 degrees 9min humidity 40 fan 1 step 4 180 15 min (I set it for 15 minutes but I check the color of the bread, it often takes less time) no humidity fan 2 I am still experimenting. I do not deny that I have difficulty in using my professional oven especially in understanding how to balance temperatures and humidity and I do not find much useful information online. But with a pinch of pride I tell you that yesterday I finally got a perfect pizza cooking, after a bit of experiments that didn't end well! mine is an electric oven! This is a convection oven. The heat is uniformly distributed by its fan, which cannot be disabled, unlike in a domestic oven. This makes the trick of being able to bake with multiple trays.

Do they have baguette tray that fits this oven?
the standard trays supplied with this oven can work for baguette.
there is also a specific tray for bread and pizza in general. We may do a video about it in the future.
